Eileen's Meatloaf
Very, very good! I always thought I hated meatloaf because my mom and grandmother always made the kind with brown sugar and ketchup, but this was fantastic! I turned the broiler on for about 3-5 minutes at the very end to crisp the top a bit at the end. Sliced and topped with brown gravy. Delicious!

Baked Pork Chops I
Very tasty! I don't usually like pork chops, but these were tender and moist. I substituted two tablespoons of sour cream in for the white wine, and it was delicious. I will definitely make again!

Country Potato Pancakes
I really enjoyed this recipe. I tried using a slightly thawed half bag of frozen hashbrowns because the grating and draining got a little messy and it worked great!
