Big Soft Ginger Cookies
These are fantastic! I followed suggestions and used fresh squeezed juice from an orange instead of water and let the dough sit for half an hour before handling. I didn't have clove so left it out (I dont care for it anyway), and rolled them in sugar. I made snickerdoodles at the same time, everyone was eating the snickerdoodle dough out of the bowl but didn't like the ginger dough. When they were all cooked though.. the ginger cookies were getting eaten far quicker than the snickerdoodles! I will be making these many more times for sure.
