I'm married, and the Mom of a beautiful baby girl named Callan. I am also a registered Dietician (I work part time at the local hospital). I love cooking healthy foods for my husband and myself....and hope to introduce my daughter to our healthy lifestyle and love of food!

Almost anything....pastas, vegetables, appetizers, muffins, etc.

My mom didn't cook a whole lot growing up....a tradition I am hoping to change with my own family!
My cooking triumphs
Never used to be good at cakes....but I am getting a lot better. Made an awesome Pumpkin cake last year...and a great carrot cake for Easter.

Slow Cooker Chicken and Dumplings
This is soooo good. And it's very easy...even my husband can make it! I left him the recipe...and some VERY specific instructions....and he did it! I did cook the dumpling more like 90 minutes and subbed 1 can of cream of mushroom for cream of chicken.

Slow-Cooked Chili
Good basic chili recipe. I added 2 tsp. ground cumin (as I think all chili needs cumin)...and substituted one can rotel for one of the cans of diced tomatoes. Gave the chili a little extra kick.

Artichoke Spinach Lasagna
My husband could not stop raving...and he is not one to give false praise! I added mushrooms, fresh baby bellas(sauteed with the onion and garlic). Not only was this delicious...it really was pretty easy for a lasagna!
