Scalloped Cabbage with Ham and Cheese

This was a great way to use up some left over ham. I added an extra half cup of ham, and will add even more the next time I make this. I also want to try adding some pasta to this dish and maybe some mushrooms, mmmm. My kids were skeptical, but they actually enjoyed it. My oldest son even had a second helping along with his dad. Definitely a great starting point, thanks Jeanie!

Chicken Breasts in Caper Cream Sauce

This was tasty! I unfortunately didn't double the sauce, but definitely will next time. The only thing I did differently was deglaze the pan with a little white wine before proceeding to add the cream. The family gave it 2 thumbs up! Thanks for posting!

Flank Steak a la Willyboy

This is a great marinade and way cheaper than buying it bottled. I'd like to try it again with a few tweaks. Maybe adding some Tahini paste or maybe some teriyaki would jazz it up a bit. Definitely pays to marinate as long as you can. Thanks!

Lemon Pepper Pasta

I made this as a side dish for the Pesto Cheesy Chicken Rolls also from this site submitted by Chompy. The only thing I added was Lemon Pepper and I used whole wheat thin spaghetti. Other than that I followed the recipe exactly. Next time I think I'd like to try and add some grilled summer squash and zucchini. There was a subtle lemon flavor which my family appreciated. A great start for a variety of different dishes. Thanks Jane!

Pesto Cheesy Chicken Rolls

A new family favorite! I used my homemade Pesto, and I also added grated Parmesan Cheese on top and baked for 35 minutes, then put it on low broil for an additional 5 minutes to brown it up a little more. I served it atop Lemon Pepper Pasta from Jane S., also from this site and a nice mixed greens salad. It was delicious! My son who is very picky loved it! Thanks, Chompy! I am going to upload a photo too!

Sugared Campfire Donuts

The kids loved these, but I too thought that they were basically biscuits with cinnamon and sugar. Some were a bit doughy in the center, but nice and golden on the outside. I guess I should've made them more on the crispy side like the picture shows. Thanks for something different to try!

Cheese Frenchy Sandwiches

I too remember cheese frenchy sandwiches from when I was a kid growing up in Colorado. We would get them at a restaurant called King's Food Host, if memory serves me correctly. I made this version for lunch for my son and I and while they were good, they weren't quite the sandwich I remember from my youth. Seemed to be something missing. I was thinking on trying again w/ some Texas Toast bread and possibly jazzing up the breading a bit. I didn't bother to freeze them, as we just made and ate! Thanks for the recipe!

Garlic Red Potatoes

These potatoes were the best I've had in some time. I was a little leary of the lemon juice, but it turned out wonderful! I baked them for about an hour and 10 minutes and they turned out beautifully! I also added a small amount of Rosemary from my garden and extra garlic. They were tender and very flavorful. My 2 sons and husband LOVED these!

Fish Roll-Ups

Very good! I'm not a big fish lover (but love crab) and this was delicious! My husband and son both loved it as well and are always asking me to make fish for dinner. This is a definite keeper! I used Flounder instead of Sole, and that was the only thing I changed. Thanks for such a great recipe! =O)
