Artichoke Spinach Lasagna
mmmm! made this for a party at work because a couple are vegetarians, but EVERYONE loved it! i used the no-boil noodles and it turned out perfect, can't wait to make again.

Cod with Italian Crumb Topping
delicious with the mayo instead of the egg white. also, i used cajun seasoning instead of italian and drizzled lemon juice over the fillets before baking. everyone loved it!

Roasted Red Bell Pepper Soup
looove this recipe! i use roasted red peppers from a jar to save time, and prefer less beans than the recipe calls for. i like to garnish with a little fresh cilantro on top.
