Sunshine S'more Cupcakes

These were a huge hit for my daughter's birthday party at home and at school. The kids all loved the idea of eating the s'mores as cupcakes, and I ended up making some with chocolate cake as well, which were terrific! Definiately a keeper!

Guacamole

I doubled this recipe, and added about a half tablespoon or so of cumin, and flew out of the bowl. I barely got any and now everyone wants me to bring guacamole for this summer's parties. Thanks for the recipe!

Seven Spiced Shark Steaks

This turned out so well - we hadn't had shark in some time, so were looking for something different to try. The flavor this rub gives is great, but pretty intense. We put them on the indoor grill, and they came out beautifully.

Not bad - I ended up having a lot of the topping left over, so will have to cut that back next time. It's something I'm going to have to tinker with if I make again. A good base.

Baked Slow Cooker Chicken

This turned out really well, but I did make a few changes. Instead of putting the foil on the bottom, I added some chopped potatoes and carrots. I also added half an onion and a few sprigs of thyme to the cavity. Talk about great flavor!

These went over really well. I actually used frozen appetizer meatballs to save a bit of prep, and added a chopped chili in adobo sauce to give a little kick to it.

Cabbage Beef Soup

This one is great. We did make a few changes, adding black eyed peas (a southern thing) and a cup of tomato juice in place of a cup of water (more flavor). It turned out really well, especially with a side of cornbread.
