Morning Glory Muffins I

i subbed 1c applesauce for the apple butter and veg oil. i also did 1c whole wheat flour and 1c ap flour. it made 10 jumbo muffins. my husband is very happy with them! he was looking for a healthy snack to eat in the morning. much appreciated!

Slow Cooker Chicken Taco Soup

i was very happy with this one. for chili beans, i used kidney beans...im assuming that was what was meant. definitely dont skip the beer. i used bud. doubled it for a large party, and had no leftovers. i made jalapeno cornbread to go with it. (homesteader cornbread recipe from this site w/ jalapenos added to batter.)

Apple Crisp II

this is WAY better than my old apple crisp recipe. i used 5 granny smith apples and 5 cortland apples. i tossed the apples in the sugar mixture. i also added some nutmeg, and reduced water to 1/4 cup. it was not watery at all, but i think it would have been with the full amount. increased topping to double the amount. the topping was REALLY good. very pleased, thank you!

Banana Crumb Muffins

these werent bad. changed a few things. added 1/4 tsp nutmeg and 1/2 tsp cinnamon to the dry mixture. added 1/2 tsp vanilla to the wet mixture. after mixing together, added 1/4 cup chopped walnuts and 1/4 cup milk chocolate chips. (my husband calls these Chunky Monkey Muffins.) i also added old fashioned oats to the topping. came out nice, cooked on 350 for 25 min, since i made large muffins and wanted them to cook inside and not burn outside.

Roasted Red Pepper and Crab Soup

this was really good! i did change it a bit. started off by sauteeing onions, garlic, and celery in olive oil. when they were soft, added 6 medium red potatoes (one would not have been NEARLY enough.) and vegetable broth. added seasonings, a little extra cayenne per our tastes, and also some parsley. let this heat up while the peppers roasted, peeled them and added them in. brought it to a boil and added the half and half. after the potatoes were soft, used my hand soup blender to puree all. got a lovely color and flavor. wish i had fresh crab, but had to go with 6 cans of lump crab and also threw in one can of baby shrimp. towards the end, added a few torn leaves of spinach for color and let them wilt in the heat. got lots of compliments!

Deb's Scallops Florentine

this was really good! i used half and half instead of heavy cream and it was plenty thick. i didnt use the mozz at all. i didnt parboil the scallops, just cooked them for 20 min and broiled for 5. i added a pound of shrimp and doubled the sauce. i used fresh spinach that i dry fried until soft. added garlic to the roux. i would have given 5 stars for taste, except for all the changes i made! definitely serve over pasta or rice for a full meal. very tasty sauce.

Pickled Red Beet Eggs

these were.....interesting. it was a special request from my hubby. i tried one, and it wasnt bad. he ate the rest! haha! i had to add a little warm water to make enough liquid to cover the eggs. after a few days, the flavor came out alot more. im not sure how i feel about the color, but he assures me that is how they are supposed to look LOL

this came out great! i loved the dipping sauce. my husband definitely ate it up, so we'll be makin it again. next time i'll add a little wasabi paste into the marinade to spice it up some! and i'll sear my tuna just a HAIR longer.

Baked Teriyaki Chicken

i followed this recipe almost exactly. i used 1/2 brown sugar and 1/2 white sugar instead of all white. it was great! i LOVED the sauce. i made it on chicken for my family, but i'm a vegetarian and plan to try it on shrimp and salmon. thanks!

Red Velvet Cake

this needed alot of changes. i made it following recipe the first time, VERY DRY and non uniform color. the second time, i used 1 cup oil instead of shortening. 4 tablespoons cocoa. when making the paste, i also added a tbsp of buttermilk to it, it made it much easier to get the color right. no brown swirls. i used 2 cups sugar. beat the frosting TO DEATH or it wont come out right. all in all, my hubby was happy with his birthday cake! it was what he requested. i thought it could have been better.

Perfect Berry Shortcakes

i dont eat strawberries, but i made this as a special treat for my mom and husband. they raved about it! thanks for makin me look good! i followed the recipe exactly, and they said the crispy top of the shortbread (coz of the egg white and sugar) was the best part.

Grilled Swordfish with Rosemary

i would have given this three stars, and my husband said five, so we compromised. it was oooookay....but really the lemon "sauce" was kind of overpowering. which surprised me coz swordfish is fishy! but it didnt do much for me. i think it was just tooooo liquidy for a sauce. it would be better if it was thickened into a glaze. made with asparagus and baby red potatoes.

Poblano Chile Enchiladas a la Gringa

these were really good! loved the flavor of the sauce. i usually make enchiladas verdes, with tomatillos. where i'm at, tomatillos arent cheap! this was definitely AS good as that recipe, for much less money and effort. i did a couple things different. i didnt use chicken, i used shrimp. so i didnt need to cook the chicken in the onion, garlic, broth mixture. i just put a cup of broth with some garlic and onion in my blender at the same time as the sour cream and peppers. used flour tortillas, and didnt fry them in oil, just warmed them up in the micro. i mixed up a little corn/blackbean salsa to go on the insides. 2 chopped plum tomatoes 3/4 can of sweet corn 1/2 can black beans 1/2 chopped small red onion 1 teaspoon lime juice salt and pepper mix all ingredients. put this, cheddar cheese, and sauce on the insides of the enchiladas with the shrimp, topped them with more sauce and cheese, baked for 30 min. perfect!

Baked Dijon Salmon

this was highly decent. my husband is not a big fan of sauces on fish, but i LOVE sauces on everything, so this was a good compromise. it wasnt super saucey at all. i think next time i'll actually coat the fish a little thicker for more flavor. this time, i had a bunch of sauce left over for dipping and that was great. i left out the nuts. all in all, very tasty. serve with some fresh green beans and baby red potatoes. mmmmm.

This recipe, as is, has zero flavor. its literally like eating mayo outta the jar. but! i fixed it. i added: 1/8 tsp cayenne pepper 1/2 pureed red bell pepper 1/4 tsp louisiana hot sauce a little extra lemon juice. it saved it woooh!

Spinach Tomato Tortellini

this was pretty good, but needed something. i'm thinking sun dried tomatoes. edit- added the sundried tomatoes....much better. also used fat free 1/2&1/2 to cut down the artery clogging, and added some chicken sausage.

Red Velvet Cake I

use 1 cup veg oil instead of shortening, and 2 cups sugar. also it should be on TBSP not one TSP vinegar. when you make the red and cocoa paste, use 1 oz coloring and add 1 tbsp buttermilk to keep the cake from marbling. beat the frosting to death and itll be perfect.

Homestyle Turkey, the Michigander Way

this is the first turkey i ever made. (i've made large roaster chickens before though.) the butter under the skin technique made VERY nice breast meat. i also added a quartered lemon and fresh rosemary and thyme to the cavity. the smell in my house was amazing. instead of seasoning salt i used old bay and pepper. the broth made amazing gravy. thanks for helping me make a nice birthday dinner for my husband's party!

Monkey Bread I

this goes quick every time i make it. the first time i used 3 tubes of biscuits, and i had to take off the top layer and put it back in. it was still gooey dough in the middle and getting too cooked on top. still tasted fine. the second time i used 2 tubes, and it came out perfect. i flipped it while still hot to let the caramel sugar drip all over it. used a bundt pan. mmmmm.
