About this Cook
I grew up in a home where my mom either cooked out of a box or gave us little debbie snack cakes to shut us up for a while. When my mom left finally, my dad cooked for us but it was a lot to keep up with(him being an single parent of two teenage girls). So when I moved out and got married in 2006, I didn't have a clue how to cook. After buying a few cookbooks, calling my Mimi quite a bit and finding allrecipes.com, I am finnally starting to find my niche. My husband is happy, I'm happy and our pocketbooks are happy (we dont eat out as often anymore).
My favorite things to cook
Oriental stirfrys, eggrolls, thai beef salad, potstickers, fried chicken, chicken parmesana, ravioli casserole, BBQ, tostadas, anything that can be deep fried, etc
My cooking triumphs
My fried chicken strips- I never have enough at parties! My cheesecakes- I make 9 different varieties from scratch-my own recipes My cookies- who doesn't love cookies?
My cooking tragedies
Tried to do a pot roast in the crock pot and didn't turn out tender. Ended up as hard as meat can be. We threw it to the dogs and ate out that night. I have never had that problem in the oven. Hmmm.

Chinese Cold Pasta Salad
I really wanted something with an oriental flavor that wouldn't take me an hour to make (egg rolls and such). This worked out really well. My hubby didn't like the bell pepper in it and requested that I use broccoli next time. My sister on the other hand, loved it! And that is a good thing because she hates oriental food. I liked it as well, although I knocked up the spiciness considerably because I like things hot. Overall, it turned out really well. Oh, and I did double the amount of sauce made.

Broccoli Beef I
This was pretty good and satisfied our craving for chinese without being uber expensive. I doubled the sauce and the amount of broccoli since I am a HUGE BROCCOLI LOVER. We put it over noodles and it got gobbled up rather quickly. I would still like to know how to tweak it to taste more like the kind you get at the restaurant. I guess I am giving this 4 stars because that is what I expected- restaurant style. But this is still good none the less.

Pumpkin Bread IV
My sister and I love the Pumpkin Muffins from Panera Bread and I have long searched for a recipe that would be equivalent. This is nearly it. I think the cloves were a little stronger than what Panera uses but it was still awesome! Panera uses a cinnamon walnut streusel topping on the top though so I will be doing that next time(I used to work there-lol) For anyone wanting to make this in a bread machine: I was able to do this easily. The recipe was rather large so I cut it down to a 1/3. I added all the ingredients into the bread pan in the order listed in the recipe. Then I set my bread machine to the 'express' setting. It may be called 'cake' or 'quick breads' on some machines. Some machines may not have it but mine did so it works well. Cutting the recipe down to 1/3 made for a small loaf- probably about 1.5 pounds but my machine can make up to a 3 pound loaf so will probably just half the original recipe next time. My hubby loved it and says that I have to make this all the time now. The real test will be when my sister comes over tomorrow for some. ^_^
