Oven-Crisped Potatoes

What an easy way to prepare potatoes! These were excellent. My husband wants me to cook these with breakfast. They're exactly what he thinks homefries should be. I followed the recipe with the exception of adding more butter. I actually think I'll use the 3TB next time. My oven also cooked these a little fast. I think I'll cook at 400 degrees next time. I was really impressed by what looks like such a simple recipe!

Chicken Cordon Bleu II

My husband and I really liked this. This is a wonderful dish to serve to company; it's great and looks like it takes great effort! The only thing I did differently is to use flour instead of cornstarch to thicken the sauce. This is a fantastic meal!

This is nice as something different in the dinner rotation. I used fresh broccoli, but I don't think anyone would tell the difference if you used frozen. Good dinner:)

Mini Cheesecakes II

What a great idea! I never would have thought of making cheesecake cupcakes. They are the perfect serving size. This list of ingredients was easy. I had everything on hand. I was very happy that I changed the crust from a vanilla wafer to a graham cracker crust. I just used crushed graham crackers and butter, and I pressed that firmly into the liners before pouring in the cheesecake mixture. I halved the recipe and made 3 with chocolate chips and made 3 plain. I served the plain ones with strawberries in syrup that I picked up in the frozen food aisle. They were awesome, and the variations are endless! I'm so pleased with how simple this was. I'm definitely going to use this recipe for our next backyard barbecue. I was concerned about the cakes not being easy to eat without a fork, but the cupcake liner comes off easily, even without cooking spray. Thanks!

Ham and Chicken Casserole

This was a pretty good casserole. It was something a little different. I enjoyed the bell peppers and ham in this. I, like another reviewer, added fresh mushrooms. They were wonderful in this. I left out the olives because my husband isn't an olive fan. I agree that this needed a little extra spice; I'm not sure exactly what to add to it though. I do recommend covering this with foil while baking. The noodles at the top of this casserole were hardened in the oven and barely edible. This is something my husband and I will have every once in a while. I'll make this next time when I already have some chicken left over. That will reduce the prep time dramatically. Thanks for the recipe!

Swiss Sherry Chicken

This was excellent! My husband and I aren't huge fans of swiss cheese, but I decided to give this a try anyway. I agree with other reviewers that the swiss/sherry combination is very nice. It tastes more sophisticated than your typical cream of mushroom recipe. I followed the recipe exactly. Cooking time was perfect. The chicken was moist and tender. Hubby and I both really liked this. Prep was nice and easy too. Next time, I may try bread crumbs in place of croutons.

Appetizer Chicken Kabobs

These were pretty good. The broiling instructions were perfect. Instead of mushrooms and green onions, I used yellow onion and bell pepper. The onion and pepper cooked wonderfully- they were my favorite part!

These were just okay. I've had much better stuffed mushrooms. I think I'll keep looking for another recipe. They may be much better minus the spaghetti sauce.

Restaurant-Style Coleslaw I

I will use this recipe for many years to come. I loved the flavor of the dressing; it's perfect. I did think there was more dressing than needed for the 16 oz. bag of cole slaw. I might omit the 1/4 c. of regular milk to cut down and also thicken up the dressing. Next time, I'll add celery seed (I love that at restaurants). Thanks so much for this keeper!

Garlic Cheddar Chicken

This was a great chicken recipe. My husband says of all of the baked chicken recipes we've tried, this is his favorite. I cut down on the butter as other reviewers suggested, but I think I will follow the recipe next time. Some of the bread crumbs on top were a little dry.

Baked Ziti I

I knew I couldn't fail with this when I saw the myriad 5-star reviews. I make this once a week now. My husband loves it, and it's sooo easy! It's hard to tell that the sauce is from a jar. Usually, I cook for two. This is enough for dinner and a few lunches throughout the week. Great recipe.

Slow Cooker Chicken Stroganoff

I'm glad I read reviews before cooking this. I was attracted by the short list of ingredients and ease of the recipe. I agree that sour cream would reduce the richness; however, I liked it rich. I used chive cream cheese (as a reviewer recommended), which I would also recommend. Also, I added a couple of splashes of Pinot Grigio. I think that was a great addition. I also wanted more sauce to go with my noodles so I used 2 cans of soup- one cream of mushroom and one cream of chicken. Next time I will follow advice of others and throw in some veggies. This was a good meal.

Pork Tenderloin in Bourbon

Rempel Family Meatloaf

This is an excellent meatloaf. The onion soup mix makes this awesome! I love salt, so the whole 1 oz. packet was great to me. Others may want to cut down on the soup mix. The cheese is great too. Next time I will put two slices of bacon over the top before cooking. Perfect recipe!

World's Best Lasagna

This gets more than five stars. I've made this twice and everyone is always impressed. My sister-in-law told me about the recipe, and I'm ever so thankful she did. It's always sure to be a big hit. The best part is using freshly grated parmesan cheese. I think that makes all the difference. I also use the oven-ready lasagna noodles, and everything turns out magnificent. This is my favorite dinner recipe.

This was a great recipe. Like most others, I felt that there was WAY too much mayo in this. I will make this again and half the mayo. I added green onions and used frest crabmeat. The taste was great.

Flatlander Chili

This chili was awesome! I took the advice of others and used a combination of tomato sauce, diced tomatoes, and tomato juice. I didn't use celery but used a yellow bell pepper along with the green. I cooked everything but the beans the night before and let it sit in the the fridge overnight. Then I heated it back up with the beans the next afternoon for lunch. It was excellent. My father-in-law who doesn't like chili liked it too! I served it with cheddar and sour cream. Thanks for the great and easy recipe!

Raspberry Vinegar Chicken Breasts

I found the outcome of this recipe to be very odd, but it may have been my fault. I couldn't find raspberry vinegar in my grocery store, so I used raspberry balsamic vinegar instead. I think this is what caused my sauce to look like chocolate sauce. I followed everything else carefully. The flavor was just ok. If I use this recipe again, I will use white wine vinegar and/or white wine instead of the raspberry vingar. My family ate this to be nice, but I don't think they enjoyed it. Once again, this may be all my fault.

Ginger Salmon

I made this for my husband, my father-in-law, and myself. My father-in-law was impressed and my husband said it was good (even though he usually doesn't like salmon). I loved it. I will definitely make this again. I, too, doubled the glaze and poured what was left after brushing on top of the salmon. I also followed the advice of others and cooked it on foil and added 10 minutes to the cooking time (since my salmon was the thickness of salmon steak). I thought it was grand! Very easy too) Thanks so much for this recipe.
