About this Cook
I'm the primary cook at my house. I turned my boyfriend from a "meat and potatoes" no spicy foods person into a spicy hot try anything new kinda guy! My family doesn't do boring and I'm a foodie so he had no choice but to conform.
My favorite things to cook
Stir fry is one of my favorite dinners to cook. I also love to make crepes, cupcakes, chocolate chip cookies, roasted vegetables (especially asparagus), broiled shrimp, banana fritters. mashed potatoes...the list goes on.
My favorite family cooking traditions
Mashed potatoes at Thanksgiving. I know, it seems like a given right? Wrong! My mom never made mashed potatoes. She's not from the US and she didn't like how unhealthy they are so we never made them, even for Thanksgiving. In my late teens I insisted on mashed potatoes for Thanksgiving. I didn't know how to make them and neither did mom. That year we over boiled them. I mean REALLY overboiled them! They were gummy and disgusting. The next year we used a mixer to beat them...too much. They were soupy and gelatinous. Gross! I think we gave up for a couple years after that. Then one year I wanted to try again, only this time I followed a cookbook recipe exactly. They came out pretty good. I was ecstatic. Now I can make the best mashed potatoes and I make them whenever I feel like it. I especially like to make them at Thanksgiving and I am always so proud of how they turn out.
My cooking triumphs
I made a cake!!!!! I never learned how to bake a cake as a kid. My mom and I tried once and it was just awful! I tried again as an adult and was again a disaster. Then, several years ago I found a recipe for a chocolate fudge cake. I made it for someone's birthday and it came out perfect! It was divine!!! Everyone loved it and I am still asked to bring it to family functions to this day.
My cooking tragedies
Nothing in particular sticks out in my mind. I am notorious for screwing up rice every now and then. I'll be cooking something else and forget to turn down the heat once the rice is boiling, then the water evaporates too fast, the bottom burns and the top is uncooked. It turns out such a mess it goes straight to the dogs.

Brown Sugar Meatloaf
We thought this was very very good! I followed the recipe except I had to use crushed stuffing because I didn't have saltines. I will make a change or two next time I make it though. I thought there was too much sugar, next time I will use 1/4 cup of brown sugar, and will add some chopped garlic. Other than that I will definitely make this again!

Kimberly's Meaty Meatloaf
I am giving four starts because I didn't think it was great but I changed the recipe according to some reviews. I think it would have been better if I had stuck with the original recipe. I don't think it would be fair to rate the recipe poorly since I changed it. However, one problem I had was that the loaves stuck to the pan really bad. I had to cut the loaves in half so I could get a spatula under them to turn them over without them falling apart. I used tomato sauce as someone suggested, as well as Worcestershire sauce and parmesan cheese. The tomato sauce was the big mistake, I just did not go with the flavor of the meat IMO. I will try this again but will use tomato soup.

Quick Angel Hair with Basil Cream for One
I thought this was good but not spectacular. It was a little bland to me and tasted a little too much of parmesan. If I make this again I will whisk in an egg yolk like I do for Alfredo, add some tarragon, and more butter for sure. I'll saute some mushrooms in the butter with the onions first, before adding the garlic. It's a decent recipe but needs tweaking to suit me. My boyfriend liked it just fine so I gave it 4 stars.
