Hummus III

Very Yummy!!!!! This is the best hummus I have ever eaten. It is a very good combination. I made it as stated and it would definitely be good to add different ingredients to it. I did add the cumin to it as other reviewers suggested. It really is delicious and easy to make.

Oven Fried Chicken IV

Coating came out crispy and flavorful. I used a tofu sour cream substitute due to allergies in the family and it came out great. I added some additional spices and took several other reviews to put the spices in the "sour cream" mixture. I used bone in chicken breasts and the meat juices were sealed inside by the coating. The meat was extremely juicy and tender. I hate dry chicken. The coating stuck to the chicken well. It was a hit with my family. I will definitely put this in rotation.

Slow Cooker Latin Chicken

I thought this was awesome!!!! My little one did not want to try it. My husband liked it and said it was good. I served it as a stew without the rice. I used a mild salsa and it was not hot at all. I liked the flavor that the sweet potato brought to the dish. I used one can of corn and one can of black beans. I also increased the chicken broth to 1 cup and used a 15 oz jar of salsa. The thickness of the stew was just right. I think I might serve it with corn bread next time and spice it up some.

Coconut Oatmeal Cookies I

These cookies were great!!!! They are different and yummy. They would be great with Macadamia Nut or white chocolate chips I think. I will still make them without due to food allergies in the family.

Chipotle Crusted Pork Tenderloin

I liked this very much!!!! My husband liked it as well. I did not have any chipotle powder so I used a chopped up chipotle pepper in adobo sauce that I had left over from another recipe. This recipe had a very good smoky, spicy, and sweet flavor. It was simple and easy to prepare with a delicious result.

My Country Style Steak

This is a great recipe. I used cube steak for this recipe and it was a wonderful. The gravy is awesome!!!! This is simple and definitely comfort type food. I made this with soymilk in lieu of water because I thought the gravy might be a little creamier and sweeter and it was. I served with buttered potatoes and Okra, Corn,and Tomatoes from this site.

Tender Italian Baked Chicken

Good flavor and moist. I misread the directions and mixed the coating into the mayo. It was kind of a paste on the outside of the chicken. It was very good despite my mistake. It is hard to screw this up. Very simple and easy.

Beef Heart Braised in Wine

Loved this dish!!! It was easy, had a short list of ingredients and turned out delicious in one pot. I think I would add more carrots and potatoes next time. If I did that I might also increase the gravy amounts slightly. I had a little more meat than vegetables.

Pork Chops a la Slow Cooker

I had to spice it up a bit, but this is a great recipe. It is very simple. I added some seasoning to the flour. After browning, I sauteed onion and garlic in the pan and put the rice in with chicken broth and bouillon. I thickened up some more chicken broth with the leftover flour. Excellent!!! Not bland at all.

Slow Cooker Ham

This was easy and I love the idea of using the slow cooker especially in the summer time. It will also come in handy during the holidays when the oven may also be busy with other things. I added bit of orange juice in the bottom of the slow cooker. Next time I will definitely put some cloves on the ham. I think 1 hour per pound is a good judge of the amount of time you will need on Low.

Crispy Orange Beef

This gets 5 stars for taste, but the prepping was so messy and I had so many pots for dinner that my cleanup was a bit too much for my liking. I thought this would be easy and quick, but it took a little longer than I would have liked.

Okra, Corn and Tomatoes

I was looking for a good recipe for okra. This was quick, easy, and excellent in flavor. I served this with grilled chicken. The only changes I made was to use fresh okra and tomato. Everything else was the same. Awesome!!!! Thanks for sharing.

Sam's Famous Carrot Cake

This was awesome!!!!!! I made this recipe with an egg substitute, soymilk, and deleted the walnuts because of food allergies and it turned out excellent. My friends could not even tell that I had omitted that stuff. I used a cream cheese icing from the store without dairy in it. I sprinkled coconut on top. My cake was a little short. If I make this again, I will probably try to use two 8 inch round pans or a little different egg substitute to get just a little more height. I make this review for those with food allergies in their families to encourage them to try some recipes for loved ones. It is more difficult, but it is not impossible. The cake has excellent flavor and baked beautifully with the instructions as provided. Thanks for sharing your family recipe!!!

A Southern Fried Chicken

I was looking for a great recipe for Fried Chicken with coating that would not be soggy or fall off. I found it. If your coating is soggy you do not have your oil hot enough. I am also not sure why others are criticizing the name of the recipe and docking stars for that. A cook is allowed to name their recipe however they see fit. To heck with all you who think this is not "southern". It is as southern as Hot Sauce and Jambalaya in my book. The coating is a bit messy, but somehow it was all worth it in the end. It is a great, crunchy, and spicy coating. This is not a traditional fried chicken recipe, but it is good and deserving of 5 stars. Thank you Jason!!! When I am in the mood, I will be choosing your recipe.

I thought this was a very good, easy dinner. I will certainly make this again. I deleted the egg because I have a boy with egg allergy and I did not miss it. I also used cracker crumbs in lieu of bread crumbs and put Italian seasoning and a salt free herb and garlic seasoning on the crumbs. I put it in the slow cooker and it was so tender.

Texas Enchilada Sauce

I thought this sauce was excellent and not difficult to make. I skipped the baking step and just rolled up chicken stuffing in corn tortillas and splashed the sauce on top. I let everything soak for a minute and then served with cheese on the side. It is great for those with dairy allergies in the family. This way the little one could eat the chicken and tortillas and the rest of us could still enjoy the cheese. I served with guacamole and Best Black Beans from this site.

I liked the combination of flavors. I liked how it is a complete meal. I liked how quick it was. I just thought that the turkey meat lacked a little flavor. Something was definitely not right. I am not sure what it was or how to fix it.

South Texas Carne Guisada

I really liked the flavor of the meat. There is not much heat, but when you are eating it with a guacamole that is authentic, a salsa with heat, and Best Black Beans from this site, you cannot go wrong and will want to eat the whole pot. Of course, you must serve this with authentic corn tortillas and not the ones from the grocery store......It is an absolute party in your mouth!!! This is going into the regular rotation for the south Texas fare.
