Low-Fat Blueberry Bran Muffins

These are awesome! My husband said they were the best I had ever made. I did substitute egg replacer for the egg and used a non-dairy milk substitute for the milk due to allergies in the family. The result was fabulous! My 5 year old gobbled them up.

Bolognese Stuffed Bell Peppers

These were excellent! The stuffing flavors were awesome. The cooking time was just about right. I think blanching the peppers ahead of time might have made them less crunchy, but I like them that way. I also cut the peppers in half to stuff them. It seems to be easier for me and I like the presentation. It is also easier if you do not want to eat a whole stuffed pepper yourself. The only thing I did differently was leave out the cheese and used coconut milk for the cream due to allergy in the family.

Beef Stroganoff III

I was not thrilled with this recipe. For some reason, this had little flavor. I am not exactly what I would blame it on other than there just was not the right combination of flavors here.

Asian Tuna Patties

Slow-Cooked, Texas-Style Beef Brisket

There is no way I would cook an 8 lb brisket even on Low for 24 hours. Any crock pot worth having and working properly should have it sufficiently cooked in 8-10 hours. So that is why there are so many reviews that say it was burned. I have used the combination of ingredients before and it is excellent. However, i adjusted the cooking time to 1 hour per pound on Low.

Quail With Rice

I made this last night for my very skeptical husband. He did not think he would like it after a very negative review of duck and goose. However, he was pleasantly surprised and enjoyed it a lot. My young son also liked it. The only thing I changed was I substituted brown rice for long grain, some of the broth for white wine(1/2 cup) and I used an herb seasoning instead of Lemon pepper. I also added fresh garlic to the vegetable mix. Thanks for sharing this awesome recipe!

Shrimp and Crab Bisque

I love this recipe. The only thing I changed was to add the wine at the beginning so that the alcohol taste cooks out and the richness of the soup is enhanced as the wine cooks. I also added some paprika and used 100% crab meat. This is DELICIOUS!!!!!

Harvest Pork Stew

Excellent and easy soup. I substituted parsnips for the potatoes. I was going to use turnips too as another reviewer suggested, but there were no good ones at the store. This is great comfort food and good leftover. This recipe made a lot! So we kept enjoying for a few days.

Pork Chops with Apple Curry Sauce

It tasted great, however, it was terribly gassy for our family so we will not make it again I do not think!!!! I even took Beano before eating this and I was gassy for 24 hours!!!! Was it the Curry Powder???? It remains a mystery.

Oregon Salmon Patties

I know I have made these before,but I cannot remember why I did not leave a review. These are absolutely THE best Salmon patties I have ever made. Softening the onion is a great idea, but I did not do it this time. I simply mixed everything together and slapped it in the skillet. I made the patties thin. I used an egg substitute due to food allergies, and I cooked in coconut oil for health. They were absolutely awesome!!!!!!!

Simple 100% Whole Wheat Bread

I have done this with success, however, I thought adding some Vital Wheat Gluten made the texture and rising a little lighter when using the whole wheat flour. The flavor of this bread is unchanged with this addition and the simplicity of the recipe is awesome!!!!! I used the gluten at 4 Tbls, and I added it at the beginning with the yeast.

Booyah Chicken

I can hardly believe that only 3 people have tried this recipe. I made this recipe and it was delicious. It is a stew that will feed a crowd. I liked the way that the different meats flavored each other, and it was very simple. You basically put everything in the pot and cook it. It is a soul food in my opinion and great for cold winter nights to warm you up.

Rice and Raisin Breakfast Pudding

I liked this recipe because it is dairy free. My son has food allergies so this was absolutely perfect. He liked it and he does not usually eat cooked cereal. I think I would cook the rice a little longer with twice as much water, but the rest of the dish was a perfect blend. I used coconut milk in place of the soy. That was good and reduces the sugar in the recipe. Yummy!!!!

Escarole and Bean Soup

Cuban Ropa Vieja

I have no idea how authentic this recipe is, however, it is simple and delicious. I thought this was a little on the juicy side for a taco which is what my husband intended to do with it. I know in Cuba that is not how it is eaten, but in my house anything that goes with guacamole is eaten on a tortilla. This went very nicely with fresh advocado or guacamole.
