Cake Mixes from Scratch and Variations

This is a nice simple recipe. I followed another viewer's recommendation and used oil. Once the batter was in the pan I added slices of thinly peeled apple (in rows). I then sprinkled with cinnamon and added brown sugar, then baked for about 40 minutes. It makes a great apple coffee cake.

Potato and Ham Soup

This is an excellent recipe. Once the vegetables were cooked, I threw in some leftover cooked broccoli that I had in the fridge. I also used evaporated milk instead of heavy cream since that is all I had on hand. I will definitely use this again. Thanks for the recipe.

Meatballs with Pepper Sauce

This is excellent! I didn't have any mushrooms but decided to make it without. I added 1 T. of mustard as suggested by someone else. Since I was using regular ground beef, I placed the meatballs on a baking sheet covered with tinfoil and baked at 375 degrees. After 30 minutes, I drained off the oil. I then removed the tinfoil for the last few minutes and continued baking to let them brown. I served it with rice. Thanks for the recipe, I will definitely serve this again.

Awesome Green Beans

What an excellent idea! I used a 1 lb. roll of country sausage. I fried it, adding 1 stalk of finely chopped celery and 1/2 of an onion chopped fine. I drained off the grease, then added 2 cans of green beans. I had some leftover potato patties in the fridge. I chopped them up and threw them in as well and cooked for a few minutes. I will definitely be making this again. Thanks for the recipe.

Butterscotch Pudding I

I really like this recipe. I did not find it too sweet at all. I did not have any corn starch, and substituted flour. I think it would have been creamier with the corn starch. I also cooked it in the microwave. This was great served with cake.

Cream of Broccoli Soup II

This recipe is exceptional. I didn't have chicken broth so I substituted beef broth but it still worked out well. I had 1 cup of leftover mashed potatoes in the fridge so I added it just to use it up. I will definitely be making this one again. Thanks for the recipe.

Pork Hash Brown Bake

The family really liked this. I precooked the pork by frying it. I also sprinkled some seasoning salt on it. I left the mushrooms out this time because one family member doesn't like them. Next time I will add them. I will definitely make this again. Thanks for the recipe.

Weeknight Chicken Cordon Bleu

I started following this recipe, then made changes as I went along. I cut up the chicken in 2" chunks, dipped them in beaten eggs, rolled them in cracker crumbs then fried in oil. I set this aside. In a casserole dish, I placed cooked rice, partially cooked broccoli, the chicken, diced ham and covered with a basic cream sauce. Then sprinkled the top with cheese and baked it in the oven. It was excellent.

Herb, Garlic and Bacon Pork Loin

I took this recipe and modified it to make a stew out of it. I used 2 pork loin chops, trimmed the fat off, cubed and fried it. I also fried the bacon and drained off the fat. I added green beans and cubed potatoes and boiled the stew until the potatoes were done. Excellent!

Savory Diet Chicken

After reading some reviews, I was concerned about the chicken being too dry. So, I mixed up a can of cream of chicken soup with milk and poured it over the top. That gave the potatoes a nice gravy. This was excellent. Thanks for the recipe.

Cowboy Oatmeal Cookies

These cookies are incredible. I used chocolate chips instead of butterscotch chips. Also added 1 tsp. of rum extract. Everyone asked if the cookies had coconut in them. They were so good!

Andouille Sausage

Instead of making sausage, I mixed the ingredients and fried the meat with chopped onions. I then added sliced boiled potato and some eggs that I had scrambled up. The spicing of the meat is incredible. This was a big hit with the family.

Pear Bundt Cake

Hamburger Pie

This recipe was well liked by the family. I did make some changes. I doubled the recipe, used 1 small can of tomato soup and 1 1/2 large can of cream of chicken soup. The other 1/2 can of chicken soup I added to the mashed potatoes. As suggested by someone else, I used corn instead of green beans. I put the hamburger/soup mixture on bottom, then cheese and mashed potatoes on top. I broiled it in the oven until the mashed potatoes were golden brown. Usually when I prepare something new, my husband will say, "I liked it better the last time" or "Not bad if you add lots of margarine, salt and pepper." This time he said that this had really good flavor.

Pork and Cabbage with Spaghetti

This recipe was a huge hit with my family. The only change that I made was that I used ham instead of pork tenderloin. There were no leftovers. I will definitely be making this again.
