Kosher Salt Encrusted Prime Rib Roast

This was superb! I won't need to go to a restaurant again. I had to add water to my salt to get it to stick to the sides. I used crushed garlic to season it. Excellent!

Chow Mein Noodle Casserole

We don't add the almonds or noodles because we don't like the crunch. I used cream of mushroom soup instead. I always double the batch. Great every time!

Oatmeal Peanut Butter Cookies III

These are gourmet Nutter Butters. I was skeptical of the recipe but the cookies flatted out well. I overcooked the first pan but the filling ended up softening the cookie nicely by the 2nd day. I am glad I doubled the batch. 3 people have asked for the recipe for these. These were well worth all of the prep time.

Baby BLT

Too much work! But tasty. These disappeared in a hurry. I used cream cheese with chives for 1/2 of the mayo. Be sure to cut your bacon up very small if using a good quality bacon because it will not crumble. I put all of my filling in a zip lock and mixted it that way. If you slice off the bottoms of the tomatoes, the insides do not scoop out easily but they don't roll on you. I opted to still scoop out the tops so I could make these faster.

Candied Garlic Chicken Wings

Tasty marinade. I seasoned and baked my wings first to make them crispy. Then I put the sauce on top. I should have reduced to til it was thick and gooey though. Still, very tasty. Husband enjoyed this.

Roasted Brussels Sprouts

I made the mistake of halving my sprouts and they were too dry inside. Toss any loose leaves as they burn to a black crisp in the oven. I also added some chopped garlic.

Fresh Tomato Salsa

5 serrano's are way too much heat! I used 10 slices of jarred jalapeno's and that was a bit much for us. I will reduce it to 7 next time. This recipe has just the right amounts of the rest of the ingredients.

Carrot Cake III

This is now my favorite dessert, with mods of course. I used 1/2 white and 1/2 brown sugar. I added 1 c raisins. I could cut down on the raisins next time. I only put 1/8 cup on pecans in the frosting as the cake had enough nuts in it. I put the batter in 2 8 inch pans for 38 min. Beautiful layered cake.

Tuscan Cream Cheese Spread

Excellent! Definitely different than anything I have made before. I used 4 cloves of garlic and it was overwhelming, and I love my garlic. I didn't have the chives or basil and it was still fantastic. Served with a sliced baguette.

Becky's Chicken Salad

Way too much mayo and I like mayo. I even added extra whipped heavy cream. Needs more grapes. I used granny smith apples in place of celery which was very nice. Added nice crunch. Used pecans but it wasn't necessary. My kids wouldn't eat this and they eat just about everything.

Southern Peach Cobbler

I should have known to double this recipe. It was gone in 1 hour. Nice way to use up a lot of peaches. Definitely double the amount of corn starch. I would not reduce the amount of sugar. UPDATE:If doubling, use 2 2 qt dishes. My large batch was uncooked under the topping, yuck.

I made this according to the directions and it ended up dry and chunky. Not smooth at all. Poor instructions. Maybe I was supposed to pack in 2 c of zucchini?

Stuffed Green Peppers I

5 stars with mods. I made 3 cups of brown rice. I added 1 cup of the cooked rice to my meat mixture. I served the cooked peppers over my extra rice with the extra juice from the pan. Loved this! The cheese didn't do anything for me. I may not add it next time. I will add minced garlic next time.
