My cooking tragedies
I always make sure the oven racks are in level after The Birthday Cake Disaster. The shelf had been put in on one level on one side and the next rung down on the other side, which I didn't notice until the cake came out, half an inch thick on one side and about six inches on the other!

Slow Cook Thai Chicken
I made this exactly as per the recipe - it was fantastic! The only change I will make next time is to put the capsicum (peppers) in towards the end of the cooking time, probably with some green beans - that would make it 5 stars. I would also call this Satay Chicken rather than Thai Chicken, but I'm not going to quibble when it was so good - it was over 45C (that's 114F!!) today, so it was great to have a tasty meal with so little effort.

Baked Taco Chicken
A huge hit! I used boneless, skinless chicken thighs and only made half the amount of coating,which was plenty for the kilogram (2 pounds) of chicken. I baked the fillets in the oven on trays lined with baking paper and gave them a light spray with cooking oil. I served salsa and sour cream on the side. Delish!

Easy Baked Chicken
This one is on high rotation at my house. I use boneless, skinless thigh fillets, a no-oil balsamic dressing and a stuffing mix flavoured with parsely, sage, rosemary,thyme and marjoram. Then I bake the chicken until I can smell it! Perfect every time.
