Brown Sugar Oatmeal Pancakes
These are now our favorite weekend pancakes. I just made some very subtle changes that are just our families preference. This recipe is great as is. We just added some cinnamon, one more egg, and some vanilla. I also cut back on the brown sugar only because we use a sweet homemade syrup that we can't live without so there would be plenty of sweet going on. With that said, these are not too sweet like others have suggested. I really like that they are less floury tasting then most pancakes. For a fun variety, we added some blueberries and strawberries to some. Yum! Thanks for a great recipe!

Sweet Potato Bread I
This was awesome!!! I tried the highest rating pumpkin bread recipe on this site and was greatly disappointed. This recipe kicks! I did some of the suggestions and did half white sugar, half brown. I used all whole wheat. I used applesauce instead of oil. I omitted to pecans cause I put them on top. Than I added a struesel topping of 4tb flour, 4tb brown sugar,6tb butter, 1cup chopped pecans (I used a bag of already sugared ones, yum!). I topped the bread when it had 10mins to go. It is to die for!

Fiesta Fry Pan Dinner
This dish was a great foundation. With a few simple additions it was great! I added garlic with the onions and than green peppers. I used diced tomatos with jalepeanos. I added a little extra taco seasoning and some cumin. I also added some hot sauce and used brown rice. Than I topped it with lettuce, fresh tomatoes and avocados all on top of blue tortilla chips. My husband who is picky with all in one kind of dishes- loved this one! Thanks for a great recipe.
