Lemon Orzo Primavera

Yummy and light! I used broccoli instead of zucchini and it turned out great! This one is a new favorite for us.

This was delightfully creamy and very yummy! I didn't have enough Parmesan cheese so I substituted some mozzarella to make up the right quantity and it turned out great! We will definitely make it again.

Brown Rice and Black Bean Casserole

We have this recipe quite often, as it is one of our favorites! We use what ever cheese we have on hand and usually substitute corn for the zucchini since my husband isn't a fan of that vegetable.

Vegetarian Moroccan Stew

This recipe was delicious! I did have to add a little more broth than what was called for and I used 2 tsp. ground cinnamon instead of a stick and doubled the cumin. I didn't have any couscous, so we ate it as is and really enjoyed it. It even went over well with my 2 and 5 year old.

Vegetarian Korma

We make this recipe frequently and it is a real favorite. We leave out the Jalapeno so my kids don't complain and we use yogurt instead of the tomatoes.
