Simple Spinach Salad
This will become a staple in my house! The only variation I made was using light miracle whip instead of mayo. It reminds me a lot of a broccoli and cauliflower sald recipe my mom used to make, but I honestly think this is soooo much better! You get more veggies and more rufage with this...plus my husband will eat small bits of broccoli in a large spinach salad more than he would an entire salad made of broccoli. I may try using splenda the next time instead of sugar to make it slightly more healthy. It could become a whole meal with the addition of cubed up chicken breast. You can't feel bad eating a ton of it because it's so good for you!

Fluffy Pancakes
I tried this to see if I could improve on the "from scratch" recipe that I normally use, and this honestly wasn't that great. The shortening formed small lumps and grossed me out when biting into the pancakes.

Baked Sweet Potatoes
This is a really good recipe for those that are slightly standoffish about trying sweet potatos. My family eat regular potatos like they are going out of style, and we are trying to make the switch to sweet potatos since they are better for you. I didn't want a recipe with a ton of sweet stuff in it like marshmallows...that's not the point of eating better. This just fit the bill for us! I gave 4 stars because I think I could tweak the basic recipe to fit our taste a little better.
