Mom's Buttermilk Cookies
I doubled this recipe and accidentally quadrupled the buttermilk, I used 4 cups. The batter wasn't runny at all, just a tad gummy. However, the cookies turned out great. Soft and puffy and yummy. I didn't frost them but did sprinkle with cinnamon sugar before baking. I liked them a lot, this recipe will replace my sugar cookie recipe since I like this texture much better. I think they'd be great with frosting, just too sweet for my husband with diabetes and twin toddlers.

Spinach Brownies
Loved it!!!! Yum...I had some frozen spinach that had been in my freezer for weeks, I just couldn't get excited about defrosting and plopping it on our plates as is. This was perfect and really really easy/quick to prepare!

Sweet Potato-Turkey Meatloaf
I really liked this meatloaf! I really needed a new way to cook ground turkey, one of our staples and this is it! I loved the texture the potato provided although I had to use a regular instead of sweet, will fix that next time. It didn't slice well otherwise it would be a five star rating. It did slice much better the next day.
