Pretzel Turtles

Reviewed: Dec. 9, 2007
I first heard of this recipe from a lady who shares these treats at the blood bank canteen. I just made 300 of these for a bake sale - they were so easy that my 5 year old was able to do a lot of the work. I bought a 6# bag of pretzels and a 2# bag of pecans from Costco - lots left over; I just need another carton of Rolos and I'll be making more turtles to give to neighbors for Christmas.

Grandmother's Famous Cranberry Bread

Reviewed: Nov. 14, 2007
This bread is a fall-season tradition in my family... we've been making it since we read the book "Cranberry Thanksgiving" 25 years ago. I've made it fat-free by using non-fat plain yogurt instead of butter. I also use whole wheat pastry flour and instead of orange peel, 1 tsp of orange extract. I always use the fresh cranberries, and I use dried cranberries in place of raisins. My neighbor has asked me to bring this bread to her holiday open house - it's fantastic!

Sour Cream Apple Pie I

Reviewed: Oct. 21, 2007
This pie was delicious! Everyone was surprised when I told them it had sour cream in it. I was out of nutmeg, so I used cardamom and I added a little cinnimon to the apples. I used 1 1/2 giant Gravenstein apples (I think that's what they were, I picked them off an unknown tree), they cooked wonderfully. I put the pie under the broiler for 2 minutes to brown the top a little more. Thanks for sharing the great recipe, Eleanor!

Bread in a Bag

Reviewed: Oct. 18, 2007
My 5-year old had fun making Bread in a Bag, and it was a tidy operation. The finished bread was a little bit lumpy and had a strong olive oil flavor but was still very tasty. Thanks for sharing this fun recipe, Castelli!

Garlic Spaghetti

Reviewed: Oct. 14, 2007
An Italian neighbor shared this recipe with my mom when I was a kid, and I've loved it ever since. I love garlic, so I'd add more than 10 cloves. Don't brown the garlic or it will get bitter. I've made this recipe several times without the benefit of parsley, and it is still wonderful.

French Bread Rolls to Die For

Reviewed: Oct. 4, 2007
Fantastic, delicious rolls. Light and fluffy. I made the dough in my bread machine and used olive oil for the oil. Update: I tried this recipe as pizza crust; I was short on time so added extra yeast; if you like French Bread pizza, this is great, but it was a tad too sweet for me, but my kids loved it. Thanks for the recipe, Jo!

Black Bean Tortilla Casserole

Reviewed: Oct. 4, 2007
Very tasty casserole and excellent as leftovers. I made a few substitutions for lack of ingredients: chopped carrots instead of peppers and since I was out of black beans, I spread refried beans on the tortillas. I also added a block of firm tofu, sliced thinly, to one layer. I used two giganic onions, and although it tasted great, a little less onion would have been better. I used 5 cloves of garlic instead of 2. Thanks for the recipe, Sue!

Alligator Pears and Apples

Reviewed: Oct. 4, 2007
It sounds like a strange salad, but it is surprisingly good! I whipped this up really quick as a midnight snack. If I was taking this to a potluck, I would double or triple the recipe.... as it was, it was a nice snack for three people. Thanks for the recipe, Gurtess!

No Bake Chocolate Oat Bars

Reviewed: Oct. 2, 2007
I can't believe this recipe has a 4 1/2 star rating. It's terrible. Way too greasy and bland too. I was looking for a recipe similar to this that I love, and this wasn't it.... I'll keep searching for my beloved "Oat Fudgies", and try to figure out what to do with these Oat Bars that no one wants - hopefully, I'll be able to recycle them into some other sort of cookie as suggested by other reviewers. Be kind to your arteries - don't make this!

Pudding Poke Cake

Reviewed: Oct. 2, 2007
I like this cake - it's easier than frosting and I think it's a little healthier; I don't get that sugar-rush sick feeling that I usally get from eating frosted cake. I've made this recipe a few times with white cake and pistachio pudding (I call it "Shrek Cake"), and I once forgot to add the confectioner's sugar to the pudding, and the cake was still great. Thanks for the recipe, Karin, we love it!

Downeast Maine Pumpkin Bread

Reviewed: Oct. 1, 2007
This is great! I followed the suggestions of other reviewers: 1/3 c veg oil, 2/3 c (chunky) homemade applesauce, 1 c white sugar, 1 c brown sugar, and I replaced the white flour with Whole Wheat Pastry Flour. I made 3 dozen muffins.... the taste and texture remind me of pumpkin spice cake doughnuts. I'm looking forward to having these for breakfast tomorrow, I'm sure they will taste even better! Thanks for the recipe, Laurie!

Tofu and Veggies in Peanut Sauce

Reviewed: Sep. 27, 2007
This is very good, but slightly bland. I started frying the veggies first (I used the bagged, chopped broccoli from Costco, carrots, and zucchini) and cooked the tofu in another pan with some ginger and garlic powder. In the future, I will add a handful of fresh garlic. I use natural peanut butter, no salt or sugar added, so I needed a little more soy sauce (I used Bragg's Liquid Aminos), but the sweetness was just right. Thanks for the recipe, Anne!

Peach Angel Food Cake

Reviewed: Sep. 25, 2007
I followed the directions of this recipe and the cake box. I baked my cake in a tube pan and it turned a lovely brown on top, but when I inverted my cake, I ended up with hot, soggy cake on the floor. A small bit of the cake was salvaged, and it tasted great, so maybe I will try this recipe again. I'm embarrased to give this recipe a low rating when it's received many rave reviews, sorry Abart.

Plum Clafouti

Reviewed: Sep. 22, 2007
I'd never heard of clafouti before, but decided to give this a try because I have a tree full of plums. It reminded me of bread pudding and crepes... I thought it was very tasty. My in-laws have never eaten bread pudding, and they thought the clafouti was rather strange, but they were polite and ate it anyway. I ate some while it was hot and served it at room temp - they might have been more receptive if it was warm and with a scoop of icecream. Thanks for the recipe, Marion!

Chocolate Toffee Crunch Bars

Reviewed: Sep. 22, 2007
I followed the recipe as stated with excellent results. I used 11 graham cracker "sheets" to make 2 cups of crumbs. I was expecting the bars to be thicker; maybe next time I will use a 9x9 pan. I might also try doubling the toffee sauce as others suggested. Thanks for the recipe, Pamela and Victoria!

Oatmeal Waffles

Reviewed: Sep. 22, 2007
These are delicious, healthy waffles! I used Whole Wheat Pastry Flour - it is less dense than regular ww flour. I had no buttermilk, so I added 2 T vinigar to enough skim milk to make 2 c. I also added 1 tsp vanilla and some cinnimon; I'll add some flax meal next time too. I love the texture of these waffles, but I did need to add less batter to the machine than with other recipes. I wanted to freeze some for later, but there were none left. Thanks for the recipe Francis!

Syrian Bread

Reviewed: Sep. 21, 2007
This bread is delicious! Bye-bye store bought pita bread! I used 2 1/2 cups bread flour, 1/2 cup whole wheat flour and used garlic salt. I let the dough balls "rest" for 5-10 minutes before rolling them out. I baked mine on an oven stone. We filled our pita pockets with falafel, cucumbers, tomatoes and tahini dressing. Thanks for the recipe, Sue!

School Lunchroom Cafeteria Rolls

Reviewed: Sep. 19, 2007
These rolls were delicious - just what I was looking for. I served these right from the oven at dinner, and they were the best part of the meal. I made half a batch (about 24 rolls) and they were all gone the next day - the kids wanted to take them to school for lunch. Thanks for the recipe, MOMMY2THREEANGELS, I'll be making these again and again and probably during the holidays too. Update: I like to scale the recipe down to 15 servings and make the dough in my bread machine. I've replaced up to 1/3 of the flour with ww flour. I don't make these as often as my kids request because I usually eat too many (the big reason why I never make a full batch). Enjoy!

Kettle Corn

Reviewed: Sep. 3, 2007
This was so delicious and so easy - I'm impressed!! It only took a few minutes to make and was eaten up even quicker. I heated the oil, did the 3 kernel test, added the rest of the corn and then added the sugar. I flavored with a little salt when it was done popping. I like the taste of canola oil, but peanut oil cooks the sugar better (be careful of peanut allergies). Thanks for the recipe, Sue!

Creamy Au Gratin Potatoes

I used six Yukon Gold potatoes and low-fat cheddar cheese. I cooked the onions with some garlic before putting the dish together. Yum!
