Salsa Chicken
This was SO yummy! And I cooked this on the stovetop, in a skillet instead. I only had the quick frozen chicken breasts and started them out in the skillet, sprayed with cooking spray. Put the lid on for about 5 minutes, then sprinkled the taco mix on top. Covered for a couple minutes more, then added the salsa. Put lid on again another 10 minutes or so, simmering low. Then turned up to high, lid off to reduce the sauce. Turned heat off, topped with cheese, lid back on for a min. to melt the cheese. Served the sauce over the rice! SO GOOD! Even the kids liked it.
