Whole Wheat Pumpkin-Applesauce Muffins
I used half bran and half whole wheat flour. Also subbed the oil for more pumpkin and applesauce. Added 1 tsp. of pumpkin pie spice to the spices because we like our pumpkin spicy)...I also added goji berries (previously plumped in water) and pecans. My husband thinks they are the best and I will definitely be making them again!

Pecan Pumpkin Pie I
I have made this recipe for the past three years and my guests always love it. This year I made a light pumpkin pie which was good but we missed the pecan/orange topping from this pie that makes it so yummy and special.

Avocado and Tuna Tapas
These were very easy to make and a huge hit! Very fresh tasting and good for you. I didn't add a lot of mayo and I mixed the avocado in with the tuna and salsa. I was impressed by the easy preparation and the great taste!
