I'm a stay at home mother of two young girls that are terribly picky eaters! But, it runs in the family, my husband is as bad as they are! I love to cook from scratch as much as possible, but I hate baking!
My favorite things to cook
I love making yummy comfort food, a nice pot roast, some old fashioned beef and noodles, spicey cajun chicken pasta, beef stew that I discovered in high school... anything warm and yummy!
My favorite family cooking traditions
Not to many established yet, but I hope as my girls get older they will join me in the kitchen!
My cooking triumphs
Maybe my beef stew, it's amazing. Takes at least three hours to make it, but it is totally worth it! Of course, I think my husband's favorite would have to be the chicken pot pie... it was wonderful!
My cooking tragedies
Oh man... I tried to make pie. And I tried to make the crust froms cratch... it didn't turn out well...let's just say I worked it to death!

Thai Chicken Curry in Coconut Milk
not quite what i expected, definitely to much acid in this recipe with all of the lemon, i might try eliminating the lemon zest and juice and try just lime juice next time around. I used sliced carrots instead of the red pepper since that is what we prefer

Pineapple Chicken Tenders
It was fine, but nothing that great. I added a clove of fresh minced garlic and marinated for two hours...but I think it probably needed to marinate for most of the day. Great on the grill though and the kids liked it since the flavor was so subtle

Fantastic Black Bean Chili
This is one of my favorite chili recipe's ever! I love the vinegar in the chili and never would have thought to do that on my own! So good, everyone is surprised when they come over by how yummy it is. I always serve it with some sweet honey cornbread.
