My cooking triumphs
I've taught myself to cook over the past few years. I'm much better at baking than anything else. But I'm getting to the point where I can tell when a recipe needs more spices, what kind of substitutes I can use, and what flavors would taste good together. That's a triumph for me!
My cooking tragedies
I cannot seem to make a decent-tasting broccoli-rice casserole. Simple enough, and I do not understand why I always mess mine up! I've had other cooking disasters, but for some reason, the broccoli-rice yuck is what sticks in my mind.

Amish Friendship Chocolate Bread
This was a very good recipe. I made some modifications, mainly to attempt to cut back on some of the fat content. I used half applesauce and half vegetable oil, and I used Splenda baking mix instead of pure sugar (the starter itself has enough sugar in it.) I also used half whole wheat flour and half all-purpose flour. I added 3 T of cocoa powder to the dry ingredients, and folded in chocolate chips at the end. The batter was very thick and at first I thought I did something wrong. But the end product tasted great. I made muffins, which I baked for 20 minutes, and a loaf, which took at least an hour. I may try a different pan next time, as it was hard to get the center of the loaf to cook. I took the bread over to a friend's house for a gathering this weekend, and the bread was gone within the hour.

Downeast Maine Pumpkin Bread
This bread is amazing. I've tried several different recipes for pumpkin bread, but this one is superior. One of the best things about this recipe is that it is delicious exactly as written. (5 stars!) Most people like giving recipes their own variations, and I am no different. I like to increase the spices, but that's a personal preference. (I like to double up the cinnamon and increase the nutmeg. I've used allspice before, because I didn't have any cloves. It's all about what flavor you like best!) I've taken other user's suggestions from the site and made other substitutions. (e.g., 1/2 C applesauce and 1/2 C oil; 2 C white sugar and 1 C brown sugar. Cutting back the sugar also works.) Throwing some chocolate chips into the batter makes a great recipe even better. The recipe makes a lot, I tend to divide the batter into 6 mini loaf pans. That way I can give some away, or store the extra loaves in the freezer. (The bread freezes quite nicely.) Overall, I LOVE this bread. Thanks, Laurie for sharing this tasty recipe!

Fluffy Biscuits
I had to add a little bit more shortening to my mix to get the biscuits to the correct consistency, but other than that, I followed the recipe exactly. These biscuits are fantastic!!!
