Zippy Cucumber Salad
I really thought this wasn't good...the flavors were all wrong. Very disappointing.

Japanese Zucchini and Onions
This really is a keeper! I can't say enough wonderful things about this recipe! I took advice from others and used only soy sauce (no teriyaki), used veggie peeler to make really thin strips, and used sesame oil in place of vegetable oil. This is definitely going to go in our rotation of veggie dishes!

Tasty Lentil Tacos
A good vegetarian alternative to meat tacos (just use water or veggie broth in place of the chicken broth)...will definitely make this one again!
