About this Cook
My favorite things to cook
I love to bake! I do tend to make mostly low fat things now, but occasionally I'll splash out and make something truly decadent.
My favorite family cooking traditions
My mum is a fantastic cook and baker. I just remember all her wonderful recipes.
My cooking triumphs
Steak and kidney pie, banana bread, cookies, seafood chowder..
My cooking tragedies
the time I put tomato sauce on fish and baked it in the oven and it came out smelling exactly like POOP! My kids still laugh about it!

Healing Cabbage Soup
Four starts only because I made a few additions...it was a bit plain without them. A tin of baked beans in tomato sauce and I sauteed the onions and garlice with bacon and sausages. I also added potato and kumara (Maori potato in New Zealand, sweet potato would work as well). Yummmm

Stuffed Guinea Squash (Eggplant)
I looked at this recipe for ideas but modified it considerably since it was *very* high in fat... I used whole wheat breadcrumbs 1 cup of low fat cheese (instead of two cups cheddar cheese 3 tablespoons rice bran oil (no butter) 1/4 cup of skim (trim) milk I also added 2 chopped zucchini and 1 cup of chopped cabbage to the mix in the pan. Add the milk just before the cheese (after the bread crumbs) to help bind it all together and then put into egglplant skins as directed. I sprinkled a little bit of grated edam over the top (literally a tablespoon on each side) and it was divine. I served it with saute chicken breast with broccoli and sweet soy sauce

Tangy Slow Cooker Pork Roast
I like others here made some changes to this recipe: I doubled all ingredients in the sauce and added the following: 1 large tbsp of seeded mustard 1 tbsp of hot curry powder 1 tbsp of tomato paste 1 clove of minced garlic (omitted the garlic powder) 1 tbsp of arrowroot powder (to thicken you could use flour, corn flour what have you). YUM! I like my food with quite a bit of 'kick' to it. I'm going to serve it with potato salad, steamed greens and fresh, warm bread.
