Blueberry Cream Muffins

These are wonderful. I halved the recipe and the only change I made was that I added an extra cup of blueberries. These muffins also keep well and are wonderful the next several days heated up in the microwave. Will definitely put this one in my recipe book!

Chicken Pot Pie IX

OMG this is AMAZING. Best pot pie EVER. I made a few adjustments based on previous reviews. I upped the onion to 1/2 cup, added 1/3 corn, increased the chicken broth to 2 cups, added 1/2 tsp of garlic salt and added extra pepper. Came out perfectly! Also I used 2 cups of pulled chicken breast because I have no idea what the pounds come out to be - it was about 2 1/2 medium chicken breasts. I wouldn't put more for fear it would be too dry. I prebaked the bottom crust for about 6 minutes on 425 in a deep dish pie dish and that was crucial because soggy crust gives me the willies. I also lowered the temp to around 375 and baked it a little longer than normal. This was simply amazing!! Will become a permanent recipe in my recipe collection!

Strawberry Cake II

OMG - THIS IS AMAZING. The best strawberry cake out there. I won't bother with any other from now on. The secret is to add strawberry puree to both the cake batter and the icing. I followed the recipe exactly with the exception that I took 14 oz of frozen whole strawberries (unsweetened!) and thawed them partially and then pureed them in a food processor. I set aside 2/3 of it for the icing and the rest I put in the cake. I heavily sprayed 2 round cake pans with baking Pam and the cake was just perfect. So moist and flavorful with that real strawberry taste - not artificial tasting at all. Then for the icing, I made a cream cheese strawberry icing that is to die for. I took 12 oz cream cheese (which is one full block plus another half) and 2 sticks of unsalted butter and used a beater on medium speed to cream that together until smooth. Then I added the 2/3 cups strawberry puree, 1 tsp vanilla, 4 cups of powered sugar and pinch of salt. Mix together with spoon and then beat again until smooth. It is just amazing. The consistency is not very thick, but will ice the cake just fine. Just use toothpicks if you made the cake in two 9 inch pans. The flavor is out of this world. I made this for my uncle's birthday and everyone raved about it! This will be a permanent addition to my recipe book and I won't bother making a different one ever!!

Bake Sale Lemon Bars

Perfect lemon bars. I made modifications because I love them tart and not very sweet. No change to crust except that I used an 8 x 8 pan, and baked it for 15 minutes at 350. Do not overbake! It will not be browned and it should not be. I was going to follow Gourmet Mommy's modifications but I only had 3/4 cup lemon juice, so I used 5 eggs, 5 TBS flour and 1 1/2 cups sugar and they turned out PERFECTLY! Tart, thick and very yummy!!!

Sesame Chicken with Honey Sauce

This was okay. It is rather bland and needs salt or perhaps some other spices to kick up the flavor. Also, the coating tends to come off the chicken pieces. I also agree with a previous reviewer that it has a "powdery" nature. Won't make this one again.

Italian Pasta Salad I

Awesome pasta salad! I only used red and green peppers as I don't care for raw onion and it was just delicious! It even kept very well the next day for my potluck and did not dry out at all. I recommend chopping the peppers into very small pieces. They stay nice and crisp even the next day. I got many compliments on it, especially from my husband who tried to eat half of the bowl the night before the potluck. This one will most definitely go in my recipe book!

Basil Pork Chops

This was okay, but did not knock my socks off. Maybe using a thinner pork chop would offer more of the flavor from the rub. My husband liked the flavor, but again, for those of you who don't like thick pork chops, switch to thin for sure.

Zippy Chicken Corn Chowder

This was to die for! I did make just a few modifications. I didn't use leeks, added a green pepper, added cayenne pepper for extra hot spice, cut down on the corn a bit and used fat-free half and half. It was simply amazing even with the fat free half and half. Will add this one permanently to the recipe book!

Delicious Ham and Potato Soup

Oh my gosh this is so good. This soup is to die for. I used 2% milk and added extra potato and extra ham and it was perfect. It is a gravy based soup, so it is not for dieters, but truly a comfort food if you are looking for one! Next time I will try it with 1% milk and less flour as to thin it up a bit. But definitely a keeper in my recipe box!!!

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies are waaaaaay too sweet and they did not come out very thick or chewy either. I would like to take some of the reviewer suggestions and try them again. I will definitely reduce the sugar and chocolate chips and try refrigerating the dough and see if that helps. Otherwise, they are just too sweet to eat.

The Best Lemon Bars

These are fabulous. I like my lemon bars tart, so I used 1/2 c fresh lemon juice. It wasn't too tart, or too sweet - a nice balance. I also decided to use an 8x8 square pan and I made sure to coat it generously with PAM before baking. And because I used a smaller pan, I didn't quite use all the crust, and cooked it a tish longer because the crust was thicker in the smaller pan. The crust is pretty wet and gooey but don't worry, it comes out great. My crust was brown on the sides but a very light golden color in the middle and that worked out just great. I let the crust cool completely before pouring in the filling and they came out just wonderfully. I took them out when the middle was not longer "jiggly". I didn't experience the strong "eggy" smell several people have remarked about. They were just delicious - a definite keeper!

Sour Cream Pork Chops

This was really good. I used 2 pork loin chops so they were quite thick. I followed the recipe otherwise. The chops were tender but a little dry, which didn't bother me a bit, but for my husband I might try increasing the liquid a little to keep them from drying out as much. Nonethless, a delicious dish!

Linda's Lasagna

This was really tasty. It reminded me of Stouffer's lasagna, only this was better because it was fresher. A very good basic lasagne to make and easy to put together! I especially liked the cottage cheese because I don't care for ricotta at all. My husband gobbled up 2 big pieces, so it must have been good. Definitely worth making at least once!

Slow Cooker Beef Stroganoff I

YUMMY! This was flat AWESOME. I doubled the recipe and followed it exactly except for the cream cheese -- I thought 8 oz would be too much, so I only put in 4 oz and it came out perfectly. It was better than I thought it would be. I will definitly be making this one again!

Four Cheese Macaroni

Oh man, this was really yummy. I made a few changes from reading the reviews. I used a cup of each cheese, used 1 egg and raised the half and half to 2 cups. I melted the stick of butter and mixed it with the cooked macaroni, then I melted the velveeta cheese with the half and half on a very low temperature, and then poured it on the buttered macaroni, added the beaten egg, then mixed in the other cheese. I then topped it with a healthy covering of cheddar before baking. It was really awesome. It's not a gooey mac and cheese, but really good. My husband said it was the best I've made so far. Will definitely add to my recipe box.

Crustless Spinach Quiche

Okay, the only thing wrong with this quiche is the fact that you will want to eat the entire thing in one sitting. YUMMY. This is simply delicious. My husband likes crust, so I just put it into a frozen ready made pie crust. Also, to make sure the pie crust cooks well, I first bake the crust for about 10 minutes on 400 degrees before putting the filling in it. My husband and I both loved this, and I will definitely add it to my recipe collection!
