Easy Spicy Roasted Potatoes

We just had this for dinner using Yukon Gold potatoes. The onions burned a bit but it was still delicious. Mine were done after about 30 minutes (perhaps I cut mine smaller). The chili powder adds some flavor but doesn't really make it spicy. My two young kids could eat it.

Banana Sour Cream Bread

Not the healthiest banana bread out there, but when you're going for flavor and texture you can't beat this recipe! It's moisture is uniform....there were no mushy parts which sometimes happens when I make banana bread. I will definitely make it again.

Whole Wheat and Honey Pizza Dough

I do as others suggest and pre-bake it for 15 min. at 350. The dough is very hearty and filling....my husband, preschooler and I can only eat about half of the pizza made with this dough.

Thai Curry Tofu

I made this with sugat snap peas, which I added when I put the tofu back in the pan. It looks nice when done, but I agree with others that it is lacking something. The curry alone didn't do it for me. It's not bad though, and I'll probably make it again with some modifications. There was enough sauce to mix with the rice I served it with. Both my preschooler and baby were able to eat it since it was mild enough.

Whole Wheat Bread III

This is a great basic recipe. My two-year old loves it with cream cheese or for making grilled cheese. I do have to add quite a bit more flour, though. I slice it as soon as it's cool and keep it in a gallon-size zipper bag in the fridge.

Banana Oatmeal Cookies III

These cookies turned out really well. I agree that 15 minutes is too long to bake them. I made them healthier by substituting 1/2 applesauce for shortening, 1/2 whole wheat flour, and 1/2 brown sugar. My 2 year old son and husband both love them!

Spinach Cheese Tortellini
