Shredded Beef Enchiladas

This recipe was just alright to me it didn't seem to have much flavor or spice to it. I am not one that likes alot of spice but for me personally I needed just a bit more.

Award Winning Soft Chocolate Chip Cookies

I loved these cookies finally one that when it says soft it really is a soft cookie. I don't know why some others have had problems with it perhaps they baked them too long? I followed this exactly and was very pleased.

Classic Macaroni Salad

Great basic macaroni salad recipe has just the right amount of tart/sweetness to it. It really does improve if left for 24 hours. I always like to tone down my onion a bit so if I don't have a sweet onion I use a regular onion and dice it up small for the salad then soak the diced onion in cold water for 1/2 hour before adding to the recipe it will calm down the flavor of the onion.

Lazy Day Cake

I made this years ago from the Taste Of Home Recipe book and it was quite good. The 1st time I read the recipe wrong and ended up with double the butter in it...needless to say it was VERY moist that time around...roflol.

Fabulous Orange Cake

I really liked the texture of this cake. Bundt cakes to me always seem so dry but this one is nice and moist on the inside. I used the chocolate cake mix and also the chocolate pudding. I then used the mini semi sweet chocolate chips. I only gave it a 4 star rating because even though I used grand marnier I still did not taste the orange in the recipe. Next time Im going to add some orange oil or perhaps some orange zest.

Mexican Chicken Corn Chowder

Out of this world delicious. I have been asked for this recipe several times and it's a new favorite on our table. If you don't have cream style canned corn or have an issue with it you can take a regular can of corn and put it in the food processor and grind it up with about half the juice from the can and it works very well.

Tiramisu Layer Cake

This was so good I followed others instructions and doubled just about everything and made 2 layers of coffee flavored cake rather than the one. I diluted the coffee in some hot water before adding so it colored nicely. I used about 3/4 cup of coffee to brush accross the layers and turned them upside down so they soaked in really well. I didnt have mascarpone so used the other suggestion for the cream cheese. The only real difference I made other than others suggestion was to add 2 TBSP of instant vanilla pudding to the whipped cream when I was whipping it for the frosting made it stand up really well. After 5 days it still looked good believe it or not.

Emily's Famous Hash Browns

Finally a hashbrown recipe my husband loves. He will rarely eat hasbrowns but when I make these I even catch him in the fridge later eating them cold. I didnt have any fresh potatoes on hand but did have one of those bags of preshredded potatoes the kind that arent frozen in the green bag and they worked just great!

Asparagus and Ham Casserole

My husband loved this I did make a few changes though I used 1 1/2 cups milk and 2 cups of cheese one was cheddar the other swiss. I had to use frozen asparagus since thats all I had on hand and cooked that a tiny bit before cutting and adding to rest of ingredients.

Chicken and Mushroom Chowder

I actually would give this 4 1/2 stars but since they don't have that option I will go with 4. My husband loved this recipe I made mine a bit larger by adding more broth and rice and since I had a can of evaporated milk on hand that was opened I used that instead of the milk.

I just made these and the dough is a dream to work with. It rolled out so nicely and to make sure that I was making a 12 inch circle; I rolled it out and used a pot cover that was 12 inches and went around that with a pizza cutter. I did mine exactly as the recipe stated and using the food processor was a snap. Next time I'm going to experiment a bit with the mixture I think for our tastes a tad sweeter would be nice and I want to try some raspberry jam in them as well with some white chocolate.

Italian Creme Layer Cake

This is a great recipe. I made it for my husbands birthday and now he requests it for every special occasion. I would use the parchment paper in the bottom of the pans to ensure that the cakes don't stick I neglected to do this the 1st time and did have some problems removing them from the pans. I followed this recipe exactly as it was written.

Canned Apple Pie Filling

I would have given this 5 stars but it uses cornstarch and I prefer using something called Clear Jel it can be purchased on the Internet give it a try it is far superior in the looks and texture also it holds up better than the cornstarch. The apples will still be crisp when you open the jar but leave the jars sit a few months before opening them they have better flavor the longer it sits the better it tastes. I add additional cinnamon and some pumpkin pie spice to mine and I do not use the nutmeg since it's not my favorite spice. I quart works nicely for a pie or for an 8x8 pan of apple crisp. I always use 1 inch of head space for this because otherwise it will boil over on you and the jars won't want to seal properly.

Spicy Rice Pilaf

I love this recipe and have been making a version of it for years. I like to add about 1/4 tsp. of cumin just because I like the taste and instead of kidney beans I use black beans. If I want to make this an entire meal I take 1/2 of a pound of hamburger and the onion first then follow the rest of the directions by adding broth and lentils.

Dilly Rolls

I have made these many times over the years and everyone always asks for the recipe. The only suggestion that I have to make is make sure you bake them long enough because the center has a tendancy to not get done all the way through and you can also loosly tent some foil over the top if they get too dark. I use real onion and grate it and it works well.

Featherlight Scones

I absolutely love these scones their nice and moist alot better than other recipes that I have tried that have turned out like rocks. I have used this recipe for years and have used different things in them to change it up. My husbands favorite is mini chocolate chips added to the batter. I also like to use currants or craisins. The batter is a little sticky but I use a scone pan which really works well just pusing the batter down into the slots. If you don't have a scone pan just use a simple ice cream scoop and flatten them a bit on some parchment paper quick and easy!
