Tropical getaway!
About this Cook
I own a ladies fitness center, so I workout alot, but I also love to eat, so it's a good thing that I workout! I have 2 boys, ages 19 and 13. My husband and both boys love it that I cook and bake!
My favorite things to cook
Any bread product and almost anything sweet! I do love a good challenge at dinner, also!
My favorite family cooking traditions
Homemade square pizzas, refridgerated Christmas cookies, Peppermint bark, etc....
My cooking triumphs
I can just about pull off any type of homemade bread product; bagels, english muffins, bread. I have a cookbook that I wrote for my son who is not able to eat wheat, so most anything that calls for wheat, I can make from scratch using other grains.
My cooking tragedies
I'm sure I have had plenty, just not any lately!

One Pot Tuna Casserole
Only reason I didn't give this a 5 star rating is because I made adjustments. I added 1/4 cup mayonaise and 1/4 cup sour cream to this. Upped the milk to 1/2 cup. Also added a can of corn. Baked for 40 minutes in at 350 degrees. Very, very good.

Luck 'O The Irish Brownie
Oh wow, are these to die for. Very sweet, so don't need a big piece to be satisfied. I followed the recipe exactly. The key to the first two layer is the cooling. Make sure they are cold before adding the 2nd and 3rd layer. Didn't have any problems using microwave to melt the 3rd and final layer. Spread very well onto cold mint layer. YUM!!

Angela's Awesome Enchiladas
This is a very good recipe and not very hard to put together. To save time I used a pre-cooked chicken from the store. I did add a little extra enchilada sauce.
