Vegetable Biryani

I used red chili flakes (1/8 tsp) in place of bay leaves, substituted corn for carrots (didn't have any carrots), added an extra 1/4 tsp of garam masala for kick, an extra tsp of salt (it needs the extra salt!), and served with cucumber raita (Indian yogurt dish).

Creamy Potato Leek Soup II

I agree with other reviewers'--the recipe doesn't specify what KIND of potatoes. I ended up using 4 medium-sized Russet and, the soup turned out OK. Little too thick for my taste. But, I added garam masala (well-known Indian spice), and that made all the difference!

African Curry

Delicious! I didn't have whole canned tomatoes so, I mixed up canned crushed and 1 ripe fresh tomato. Added 1 tsp garam masala (for *kick*), and halved the entire recipe. Was delicious!

All-Around Good Smoothie

Best smoothie recipe ever. Plain & simple. We omitted the flaxseed because we didn't have any and, substituted MANGO for the strawberries. The consistency, texture, taste, smooth-ness, healthiness of it all made it the perfect smoothie!

Quick and Easy Alfredo Sauce

I made a few changes to "zest" up this recipe to our liking. I used light cream cheese and included 2tbsp. Ricotta cheese. The slightly-granular flavor adds to the texture and taste. At the end, I added a handful of scallions and one finely diced green chile--gives this kick!

Sauteed Apples

The best breakfast we've had. Served it hot on pancakes with a little bit of butter and, voila! gourmet brekkie in 30 minutes flat. I added the 1 tsp. vanilla and loved it!

Brown Rice Black Bean Burrito

Absolutely delicious. I added a couple of squeezes of fresh lime and salt, and let the rice/bean mixture cook for a few extra minutes before making the burritos. The lime added the "zing" that was missing. Also, lite sour cream works better!

Banana Pudding IV

Absolutely delicious. I HIGHLY recommend the following modifications: (1) use ONLY Vanilla instant pudding as the recipe instructs (do not use banana--its fake!); (2) use only 1 can of condensed milk (up to 1.5, if you like your pudding super-sweet), but 2 is way too much; (3) I left the cream cheese out on my windowsill the night before; in the morning, it was ready to whip. SO many people asked me for this recipe!

Easy Southwestern Salad Dressing

We use this delicious dressing to bind together a quick, yummy, and complete meal in salad-form. Cook up a couple of cups of tri-color pasta shells. Drain, rinse, and mix them together with black beans, corn and green onions (scallions). Throw together mixed baby greens, fresh spinach, chunks of avocado and halved-cherry tomatoes. Crush a couple of cups of tortilla chips on top, add this BBQ-Ranch dressing and, you're set with a hearty, healthy meal.

Garden Veggie Pizza Squares

This recipe was divine. I paid attention to the reviewer's note to use only half the package of dressing powder, which is important. Best thing is, its quick, its unique, and it pleases all palates--even big meat-eating ones. Kids will get their veggies, adults their good-tastin' meal, and you, more time OUTSIDE of the kitchen because this recipe is so quick & easy to make!

Annie's Fruit Salsa and Cinnamon Chips

Absolutely divine. I followed the recipe exactly as prescribed and, the bowl of fruit and chips were gone in no time! The mixture seemed a little more runny than I'd have liked--any suggestions for keeping the fruit salsa a little more "solid" without sacrificing taste? Also--I highly recommend ORANGE MARMALADE as your jam base!
