Potato Latkes I
I adapted this to use up 2 small potatoes for a quick snack of 4 latkes. Didn't use cheesecloth, just a strainer and oops, I even forgot the eggs! They stuck together just fine, cooked them in canola oil & served with a little sour cream on the side! GREAT.

Salmon Fillets with Creamy Dill
My fillet was 1/2 lb so I used 1 1/2 tbl mayo and 1/2 tbl dijon mustard. Also added a squeeze of fresh lemon juice to the mix and on top of the fish prior to spreading. Baked it for 13 mins, just until light pink. VERY GOOD.

Mini Reubens
This was a huge party hit! I substituted pastrami for the corned beef and also toasted the cocktail rye before putting the ingredients on and then broiled. This made it a little firmer.
