Easy Mexican Casserole

My husband gives this 5 stars - as the recipe was written. (He put hot sauce on his meal.) I felt the 3 cups crushed tortilla chips was too much. Next time I'll only use about 1.5 cups. I used tomato sauce and it worked, but I will go with taco seasoning with the other reviewers.

Chocolate Chip Cookies (Gluten Free)

I made this according to the recommendations in the reviews... an extra 1/2 c. GF flour, 1/2 t. salt, 1/2 c. brown sugar and 1/4 c. white sugar. The salt, sugar was fine, but it was too much flour. When I make this the next time, I will make te recipe and only add enough flour to get the right consistency (if any is needed at all). I really appreciated having this recipe for chocolate chip cookies! Thanks for sharing the recipe!

Pumpkin Chili

This was wonderful - and fun to make. My son came into the kitchen while I was adding the pumpkin and looked surprised... and he loved the chili. My husband really liked this - and had no idea. Thanks for sharing this great recipe!

Oven-Roasted Vegetables

Simple, flexible (could easily use other veggies) for the busy cook. The trick is to let the veggies carmelize. Mine took over 30 minutes because I used some veggies from the freezer... Yum!

Best Pennsylvania Dutch Chicken Corn Soup

My family and I loved this. It is a very flexible recipe that allowed me to adapt it for gluten free, use a chicken carcass and add more veggies. I added leftover chicken carcass, 6 cups LOW sodium chicken broth, 1 1/2 cups leftover veggies, chopped onion, chopped celery, nutmeg, black pepper, 6 mini ears of corn, and rivels made with 3/4 cup gluten free pizza crust mix, 1/3 cup unsweetened almond milk, 2 tablespoon olive oil, 1 egg, and 1 tablespoon italian seasoning. I also left the corn on the cob.

No Bake Camping Cookies

Made these while we were camping. The butter made them really soft and did not want to stick together. Per the reviews I read here, will add peanut butter next time. Giving a '4' for the consistency/peanut butter substitution. Otherwise, these were great - our family loved them (even a couple days later when we realized there were some left!). Thanks for sharing.

Easy Grilled Chicken

Chicken and veggies are awesome and fast as a stir-fry. We omitted the peppers, and added a portobella mushroom, onion, Bragg's amino acids and pepper. When you can't think what to fix for dinner, Allrecipes comes to the rescue!!

this actually ended up being a mix of two recipes - I added canneloni beans instead of garbanzos, some left over rice, curry, vinegar for a nice sweet curry taste. Hearty, but not too filling. Thanks for sharing fatfreevegan!

Garden Paella

This was an incredibly flexible recipe: My easy version... onion, garlic & proscuitto sauted. Add leftover cooked rice (cooked in chicken broth), add a bag of diced frozen veggie mix (this one had broccoli, carrots, cauliflower). Next the spices: thyme, turmeric and paprika. Saute a couple minutes more and we have a winner! Although my family couldn't tell you it was a Paella, they could tell us they loved it...and they all had seconds! Thanks for sharing! 7/7/11 - Made this again, but followed the recipe more closely. Instead of long grain, I used jasmine rice and it came out very sticky. Considering how wonderful the recipe was before, when I make this again, I would probably go back to my short cut recipe above...

Haroset for Passover

I have loved Haroset when others make it. This was my first time attempting this dish. I used Fuji apples, pecans, honey and port. The family liked it - but no one took seconds. When I make this again, I might chop the apples finer (think food processor).

Lemon Pineapple Dessert

This was an old family recipe. My husband's grandmother made this when her children were small, only she made it by adding mini marshmallows and sometimes added maraschino cherries. My mother-in-law brought this for Easter today - and it was so good. She added 2 cups mini-marshmallows. Yummy! Thanks for sharing!

Love, love, love trout almondine. This is a quick version - done on the stove. The trout may have a tendency to stick to the pan. Nice taste. Substituted almond flour for the coconut flour...

Chicken Pot Pie II

This was a 5/5 per the hubby... I loved this because no 'cream of _____ soup" was needed. Since my family eats gluten free, this converted pretty easily to GF by using a GF flour and crust. This was my first attempt at GF pie crust, and used a GF crumble type top crust. Since chicken thighs were on sale, they got used instead of breast meat! Everything else went according to the recipe. Thanks for sharing - this was awesome.

Southern Grits Casserole

I made this without reading the reviews and everything cited was going to be in this review. Although I had the quick-cooking grits on hand, next time I would go for the stone ground or old-fashioned grits (healthier: higher glycemic index). Other healthier alternatives that I used were low fat cheese, turkey sausage, half the eggs, and low fat milk.

This is pretty good stuff! Although it says you can blend with a hand mixer, it doesn't work well. I added beans like one reviewer suggested. Very versatile recipe. Thanks for sharing!

Mushroom Sauce

This was good but not great... will keep tweaking. I had no arrowroot so subbed tapioca. Also added tarragon, parsley, and basil to give it a little more depth. Will make again.
