Chicken Piccata

Served this for company last night over penne pasta w/ broccoli & fresh rolls. EXCELLENT dish! I more than doubled the sauce to have enough for the pasta - 14 oz can of chicken broth, then used the can to put the same amount of white wine in, 2 T cornstarch (mixed w/ cold water first to dissolve), more salt & pepper, and about 2 T of lemon juice.

Homemade Crispy Seasoned French Fries

SO GOOD! I just made these (the last batch is frying up as I type!) and they are perfect! I fried each batch for a few mins (maybe 3-5) & then drained them on paper towels as I made the next batch -- then did each batch again for about 5 mins to make them super crispy! I will have to keep them warm in the oven until my husband gets home for dinner....if they last that long!

Restaurant-Style House Salad

Awesome, easy recipe! Took it to a dinner party last night & got several compliments & requests for the recipe. I used bagged salad greens, added green olives w/ pimentos, omitted the other pimentos, and added salad peppers -- PERFECT! My husband is a ranch-dressing-only kind of guy, and he just asked me to make this again w/ dinner tonight! GREAT SALAD!!

Banana Banana Bread

OUTSTANDING! I was looking for a (fairly) healthy snack for my 18 month old, and this is perfect! I added 1/4 cup sugar, 1/2 cup whole milk, and 1 tsp vanilla extract. I also sprinkled brown sugar on top before cooking, as a previous reviewer recommended. PERFECT with a big glass of milk!

Chocolate Fudge Buttercream Frosting

I was hoping this would be stellar b/c I was doing a "test" batch of cupcakes before a party. I made this w/ the Too Much Chocolate cake recipe from this site. I usually really like chocolate frosting, but this was just not outstanding, unfortunately. It tasted a little too much like fudge - that was really the overwhelming flavor, which is not what I look for in a fantastic frosting. Overall, really good, but not stellar.

Too Much Chocolate Cake

I made these as cupcakes & they turned out great! I didn't change anything in the recipe & baked for about 17 mins. I made them w/ a chocolate buttercream icing from this site -- and have to say that they were better w/ just a dusting of powdered sugar. My oldest son had 3 - THREE!!! - of these & would have had a fourth if I had let him...and he doesn't even really like sweets!

General Tsao's Chicken

Very good, but a lot of work! Definitely need to double the sauce, but halve the cornstarch -- way too sticky. Good with brown rice & broccoli. Used previous reviewers advice to marinate in Texas Pete & soy sauce, and used 1 1/2 T crushed red pepper in place of the peppers; also, sauteed the chicken instead of deep-frying. With TX Pete & crushed pepper this dish was WAY too spicy for our 17 mo old - but my husband & I will probably be fighting over the leftovers tomorrow... Bottom line: Good, spicy, and well worth the extra work.

Roast Beef and Gravy

This was good, but not outstanding. I added a lot more liquid because I added an onion, fresh mushrooms, and a bag of baby carrots. I then removed the beef & veggies from the gravy before serving & added cornstarch to thicken it up. Served w/ garlic mashed potatoes, broccoli & hot, fresh bread. I may try it again when the weather cools off -- it is definitely a stick-to-your-ribs, comfort food meal.

Buffalo Chicken Dip

I just made this for a football party & it is keeping warm in the slow cooker. I had to taste it before I serve it, though -- and it is EXCELLENT!! Perfect w/ the chicken-in-a-biscuit crackers. This one will be a regular for get-togethers! Super easy, super cheap, and very tasty!!!

The Supreme Shepherd's Pie

This was a great base recipe - and a very good way to use the leftover roast beef I had from a slow-cooker recipe off this site. I did saute mushrooms w/ the onions & added steamed carrots as a layer, as well. I also added prepared horseradish to the mashed pototoes & it turned out very tasty! A good blend of flavors, but I feel like it would probably have been too plain w/out dressing it up a bit.

Chicken Cordon Bleu II

Tortilla Rollups II

These were not fantastic, I am sorry to say. I was so hoping that they would be! I added ham to try to add to the flavor, but they were still just a little off. Dipping them in hot salsa helped, but I think that was only because it covered the taste of the cream cheese! Very easy to make but just not a great taste, unfortunately.

This was fantastic -- and so easy! Chx parm is my husband's favorite dish, and he said this is the best he has had, by far! Served it w/ fresh broccoli, penne pasta & red sauce, and fresh italian bread. Perfect!

Chocolate Covered Strawberries

INCREDIBLE recipe!! So easy, and sooo good! I already have requests to bring them to Easter Brunch next Sunday! I did drizzle white chocolate over them -- if you melt it, then put it in a baggie & snip off just a VERY small corner of the baggie, it works perfectly!

Easy White Chicken Enchiladas

Not fantastic, but passable. It was too contrived w/ the pre-made white cheese sauce on top -- I used Tostito's brand as recommended. Without the tortillas & with shredded chicken, would have been good as a chip dip...but not as enchiladas.

Sauteed Garlic Asparagus

Used olive oil instead of butter, added salt & pepper. Still a little bland. You do need to stir them pretty much constantly or they will burn!
