I really appreciate food in its simplest form without seasoning. I think it's most important to look for fresh and organic ingredients in order to achieve the best taste naturally, before maximizing the flavor potential with seasoning. I hate heavy foods that make me feel stuffed and exhausted like I just went to a Chinese buffet. Ultimately I am simple and organic, and I think my foods reflect that pretty much.
My favorite things to cook
I really like cooking ribs. I am still experimenting different ways to cook them, but I am rarely dissappointed. Fish is another fav of mine, especially flavorful fish like Salmon. Salads are pretty fun too. I love to throw a bunch of different things in a salad bowl and make my own dressing. It keeps eating salad healthy and interesting, instead of boring and redundant.
My favorite family cooking traditions
My Grandma makes the best pot roast. I still have to get the recipe from her. And her Thanksgiving turkey is to die for. She bastes the bird every fifteen minutes, so when it comes out, it's moist and juicy like no ones business. She's one heck of a Baker also. Her Polish heritage comes out in all of her cooking. Everything done from scratch and with precision.
My cooking triumphs
My mother-in-law taught me how to make Brazilian-styel chicken using the entire chicken. I've adapted the recipe to American chicken parts, but the flavor is the same and O MY GOODNESS it's good.
My cooking tragedies
The only way I've destroyed meals is by experimenting with spices and being disappointed. It's never really "tragic" but there have been times when I went overboard on a flavor and didn't know how to dilute it. That pretty much sucks.
