Portuguese Muffins - Bolo Levedo

I absoluely love portuguese muffins. The problem is that I live in Virginia, and I am unable to find them anywhere in my area. I was so excited to find this recipe. I followed the recipe exactly except that I baked the muffins versus frying them in a 350 degree oven for about 10-12 minutes or until done. Although they don't come out golden brown as the picture above shows, they are delicious!

Ground Beef Stroganoff

I was looking for a quick meal and thought that we would try this based on other reviews. I was disappointed because it was extremely bland. To make it more flavorful, I tried adding more spices (garlic powder, onion powder, mustard powder, paprika, worcestershire sauce, cumin, coriander, salt, and pepper) and nothing I seemed to try worked. In the end, I ate 3 bites, my husband called it "just substance" and one of my three daughters call it "yucky". Now, on the bright side the other two girls seemed to like it and that is why I rated it two stars instead of one. I am sure that this is a good recipe for someone else, it just did not work for me.

World's Best Potato Salad

Although the flavor of the dressing was fantastic, there was just too much of it making the potato salad soupy. The potatoes were cooked well, but for some reason hardened after once they were put in the refrigerator overnight. I am not sure why. I guess I probably messed that up somehow. I do think that the potatoes needed more seasoning. Overall, this is a very good recipe, I will try it again with a few alterations. First, I am going to dice the potatoes into dime sized pieces. I am going to use only half of the dressing at first and use some of the remainder if needed. I am going to use more salt and pepper. In addition, I will use some more celery, onion, and finely chopped carrots to add more crunch and some sweet relish for added flavor.

Slow Cooker Pulled Pork

I made this for my daughter's 5th birthday party. It was so easy to prepare! Her party was at 3:00. I used a 3.5 lbs. pork tenderloin, a whole onion chopped, and a cup and a half of root beer. I seasoned the meat on both sides with a mixture of salt, pepper, garlic power, and onion powder. I put the meat, root beer and onion in the crock pot at 8:00am. Every hour I would turn the meat over just so that each side would benefit from the marinade. At 2:00pm, I pulled out the pork loin and drained the root beer in a colander. That left the soaked onions which I put back in the crock pot with the pork. I, then, pulled the meat and lightly chopped it. I poured an 18 oz bottle of Sweet Baby Ray's and then cooked it for an additional hour. It came out absolutely wonderful. We will definitely be making this again!

Brown Sugar Meatloaf

This meatloaf is very good. For this recipe, I made a few minor modifications to adjust to my family's tastebuds. I used a meatloaf mixture which includes beef, pork, and veal. I chopped and sauteed some peppers and onions. I doubled up on the seasonings and on the sauce. I also included a sprinkle of cumin and corriander. I put the sauce to put some on the bottom and on the top. Great recipe! Easy to modify. Thank you for sharing.

Smooth Sweet Tea

I am a Virginia girl, and I love authentic southern sweet tea. This recipe rivals many of the sweet teas I have ever had! I used my Iced Tea Maker for this recipe, with a few minor adjustments, it came out fantastic. The recipe (as is) makes about 2 quarts. My machine makes 3 quarts. To accomodate, I adjusted the baking soda up by a half of a pinch,used 3 family sized tea bags (equivalent to 9 regular tea bags), and increased the sugar to 1 cup + 3 tablespoons. If you use an iced tea maker, just sprinkle the baking soda at the bottom of the pitcher, add the recommended amount of ice based on the amount you are making, and once the tea has finished brewing all you will need to do is add the sugar, stir, and enjoy! Thank you for such a great recipe.
