Baked Dijon Salmon
Excellent! i made this for a party of 20 and it was wonderful. i used crushed pistachios instead of pecans, and slathered on the sauce and let it rest for about an hour, then topped and baked. it was a huge hit. the big filets took much longer to cook but were v flaky and flavorful.

Mandarin Orange Cake II
this was VERY average at best. i would recommend adding the juice of the oranges in first, then the fruit when the batter is well incorporated. all the mixing made the oranges disappear and basically seem nonexistent!

Raspberry Oatmeal Bars
These are surprisingly good. In a panic i tried this recipe b/c i did not have enough flour to make bar cookies from scratch. I used a butter cake mix, added 1 t. vanilla, a splash of milk (as previously recommended), and lemon juice instead of water to apricot jam. they turned out quite good. if i make them again, i agree that they need more than one cup of jam.
