Zucchini Pasta Bake
Very Good! I did not have all spices and used bread crumbs instead of crackers (didn't have those also) but even with my alterations, it was good. Will try next time with all ingredients!

Dad's Escarole and Bean Soup
Excellent! Made it a few times and never the same. A very adaptable recipe! From different beans, greens to even adding pasta----ALWAYS DELICIOUS!

Provincial Tomatoes
I layered thick slices of zuchinni, tomato and small eggplant from garden overflow. Topped with motz cheese and then the bread crumb/parmesan topping. baked at 350 for 20min. UMMY!!!!
