Hot Artichoke Spinach Dip

I made this recipe out of necessity. I forgot I had to bring the dip for Thanksgiving and it was too late to run to Costco, so I found the recipe on my iphone and gathered the ingredients at the store. I've made a dip like this before and it turned out "alright" but not MMMmmmm!!! The only thing I forgot to do was put in the garlic... after it was done! I know DO NOT forget the garlic! I had some roasted garlic heads in the fridge and quickly smooshed them up and I put in probably 1 1/2 HEADS of roasted garlic... I know that's a lot but it was incredible and we all love garlic. So I mixed up the melted mozzarella on top and mixed it back into the dip, incorporating the garlic and then sprinkled more mozzarella again.... cooked for another 20 minutes, took it out and hoped for the best. The dip at Costco is one of our favorites!! My sister tasted this and she thought it tasted just like it, if not better. This was great... she wouldn't embellish her compliment. lol I thought it was fantastic!! I don't know if cooking it twice made any difference, but oh it was delish. It was almost all gone by Turkey time and no one was hungry. Went great with crackers. I think the grainier the cracker the better. :-) Will keep this one forever!!

Roasted Pumpkin Seeds

The butter is the key! Well salt is also necessary but in the past i've just toasted them with salt after cleaning them in water, but adding butter is SO much better! I can't wait to make these again!!!! They were incredible and they didn't last long unfortunately! :-)

French Onion Soup Gratinee

Excellent. I loved it. I had to make a couple changes b/c of ingredients on hand, but it still turned out delicious. I used half chicken stock and half beef stock - 32oz of each. Thought I had Balsamic Vinegar but couldn't find it so had to use apple Cider Vinegar. I will try it according to recipe next time but this tasted great too. Just so good! I also used croutons b/c I didn't want to go out to store for bread and it worked in a pinch, I know it's not the same but it was good. You can also make your own croutons by cubing bread, tossing with butter and toasting. I'm going to have to go out and buy some oven-safe bowls now! I put it in bowls and put it under my toaster broiler, which worked great. Just use oven-safe bowls for this obviously. lol

Outrageous Chocolate Chip Cookies

Delicious! I thought there might be too many chocolate chips, but it wasn't. I doubled this recipe and had to hide some of them to keep the kids and dh from eating them all the first day! They can be put in a ziplock bag and then I stored them in a tupperware container for a couple weeks and they were still fresh as can be. This combo is really good and the peanut butter isn't overly peanutty. Thanks for this recipe!

Potato Leek Soup III

This was really great! Kids didn't like it but that doesn't mean anything! :-) We doubled the recipe since I had four big leeks and then only used 1 1/2 c butter, but we added a pound of crispy bacon pcs. It was great. We also pureed most of the broth and leeks because I wanted to hide the veggies from the kids. Left potatoes in chunks though. Used half and half instead of cream. Really really good!!! What a perfect recipe for a cool day!!

Sticky Monkey Brains

This was pretty good. It's definitely something the kids can help with... sorta make a production line. One can cut up the biscuit dough, one can drop it into the sugar mixture and one can put it in the pan. I think it's important to make the pcs small enough because they do rise and they could be too dry if smaller pcs are not used. This turned out well but it wasn't very good reheated... a little hard. It is very sweet, but not like the monkey bread in the frozen food aisle at the grocery store. That one is really soft which is what i was hoping for in this recipe.

Asian Lettuce Wraps

Delicious... not quite PF Changs but delish!! That's why I'm giving it 4 stars - not 5. I'd actually give it 4.5 stars if I could. It's a little on the expensive side after buying Hoisin sauce and all the other ingredients but it's worth the effort.

Truck-Stop Buttermilk Pancakes

These pancakes were great. The recipe made a lot but I like to make them and either freeze them for future weekday breakfasts or stick them in the fridge for that weeks on-the-run breakfasts. I did have to add more milk to make them less thick (but I always do that b/c I like them thinner - and they cook faster). Overall, these were delcious and better than the other recipe we tried on here I think.

American Frittata

This was very good. I think it's a very forgiving recipe. I used two pounds of bacon pcs, a small bag of tiny yellow potatoes, half an onion (and probably should have used the whole onion but it was still good but I like more onion flavor), and I used about 18 small/medium eggs I got from my chickens today. This made two skillets. Topped them with cheddar cheese and baked. I had to bake a little longer than 10 minutes each. More like 15 minutes because I wanted the eggs firmer and not runny. I was pleased with the end result. It's an easy recipe but not a "fast food" recipe due to making the bacon and cooking the potatoes. IF you had baked potatoes from the prior night, it'd be a little simpler... so bake a couple extra potatoes next time you make them for dinner.

Terrific Turkey Chili

Delish! I am a fan of chili and this one didn't disappoint. As a note I didn't have all the ingredients on hand... Corriander for one and my kids don't like spicey so I left out the pepper flakes or green chile peppers and green bell pepper. (I know... I'm changing the recipe a lot) The great thing about chili is it is VERY forgiving and even when it's not the best it's still really good! My family hated the zucchini though (I liked it!). Along with the above changes, I didn't have ground turkey, I used some hamburger and some chicken breast sliced thinly and seasoned like the ground turkey would be. I actually really like the chicken in it like this! It gives it nice big chunks that are full of flavor. I also added a can of kidney beans and a can of black beans - both drained! Everything was good and very simple. Threw it all together in about 30 minutes. Taco seasoning mix worked surprisingly well.

Spaghetti Sauce II

This was very good. I think the red wine adds a dimension not normally used. It helps a lot! Everyone loved it. I also used hamburger and threw in some meatballs (hubby like lots of meat). This was also very simple and fast.

Gumbo Style Chicken Creole

Oh my goodness... tastebud heaven. I did make some changes according to what I had on hand... did add chicken broth to make it soupier and added cayenne pepper instead of hot sauce... oh it is so good! Thanks for this SIMPLE recipe!

Quick and Almost-Professional Buttercream Icing

Wow. This was really good and very easy. No need for heavy cream or anything I don't often have on hand which was the most appealing to me. It was also really great piped onto my halloween cupcakes. I doubled the recipe because I wasn't sure how much one stick of butter would make for a cake mix recipe - 24 cupcakes - and I didn't want to have to make another batch with different colors of icing. I had extra icing leftover. Can't say how much the leftovers would cover but I piped it on really heavy, so I'm not sure if it would cover another entire cake mix or not. I'll use the leftovers it to frost some cookies. Thanks!

Bacon Quiche

I was lazy and put this in a frozen pie crust I cooked for 12 minutes on 350. The poured the egg mixture into it. I put the bacon and cheese on at the last few minutes. I'm not a huge fan of quiche and truth be told, this is my first quiche, but since we have chickens and get half dozen eggs each day, I'm trying to discover new recipes we can make with eggs. Granted my crust came out a bit mushy and I don't know how else to fix this except by putting tin foil over the top and baking longer. I would recommend if you put it in a pie crust to leave out some of the butter that the baking mix needs. Mine was too oily... but that may have to do with the pie crust? I made this last night for dinner and we didn't care for it too much. I did add some onion powder and garlic salt to it to give it some flavor as someone suggested it was a tad bland. This did help give some taste to it. Today I had some leftovers for lunch and reheated it in the convection oven. Crust was still mushy (not the recipes fault but mine!) but overall it was tastier today than last night!!! Firmer too. I think this recipe needs baking longer than it recommends and I should have done that last night.

Fresh Spinach Salad

My husband does NOT like spinach but my oldest son wanted to try Popeye's Spinach at the store, so I wanted to make it taste as good as could be so that he'd know he likes spinach. My husband ate 3 helpings and my son ate all his salad too. Even my 3 year old daughter loved it. And such simple ingredients that we have all the time. Can't wait to make this again. Could have cut the dressing in half since it made so much, but now we have more for later. So delicious! Update: I like cheese on my salads and had some Feta in the fridge... awesome!

Bread Pudding I

Perfect. I was in the middle of making this when I realized I was late for an appointment, so I set my oven cook timer and prayed for the best. I cooked it exactly as indicated and even had the sauce ingredients in the pot but not cooked yet. So, I came home and looked at it and it was beautiful sitting there in my oven. The sauce turned out delicious too even though I got impatient and poured more clear jell into the sauce to thicken it quicker... then it got a little clumpy, but it was still SO tasty. I always save my heels of bread and stick them in the freezer so I can make a bread pudding when I have enough. Takes about 14-16 heels I think to make a bread pudding! :D The more the better. I dumped the bread/sugar mixture into my greased pan BEFORE I poured in the milk mixture... then I poured the milk mixture over the cubed bread, making sure to get it all soaked. This helped to keep the bread from falling apart (I've done that before!). This is an exceptional recipe. Thanks!!

Royal Icing II

This was really great. Easy to make. Used for our cookies. It hardened very well but not so hard that you couldn't bite into it without chipping a tooth. Didn't harden up too quickly either but I did keep it covered with a wet cloth just in case. I added different food colorings in it for our cookies. NOTE: The Meringue Powder is found in the Wilton's baking section at Michael's Craft Store or in the craft area at Walmart.

Hot Artichoke and Spinach Dip II

I'm only comparing this to the one you get at Costco that is so fabulous that it makes your knees weak. To start with, I think I put too much pepper in this but, it is definitley good and I know without a doubt that guests would enjoy this, but it's definitley not Costco's dip. It comes out very nice and bubbly. But, I had to bake mine for more than 25 minutes (about 35 min) in order for the entire top to be lightly browned.

French Toast Bake

I got this recipe from a friend in MOPS. Can't go wrong with this one. Fast and easy and always a crowd pleaser. NOTE: The pan MUST BE GREASED. You can use mixed berries or blueberries; I always prefer blueberries - less seeds. The tartness of the blueberries balances the sweetness of the bread and we add a touch of syrup. I also add some cinnamon to the egg/milk mixture. I never have had it with the pecans... even though I'm sure it's delicious... just more pricey and never seem to have them on hand. I've never had to flip the bread, however I do have to bake it longer than the recipe calls for. Maybe as much as 45 minutes BEFORE you add the blueberries. But all the milk/egg mixture should be cooked through. Be patient! :-) I did take it out too early this xmas brunch (we were hungry and my father LOVED it still) but I put it back in for 10 more minutes and it was perfect. It will turn out delicious if baked enough. I think the time varies because the various bread thickness that people cut. I like thick bread and cut it thicker, then add more eggs and milk (used eggnog for my milk for xmas breakfast), thus making it take much longer to bake. Just give it time. But 25 mintues is certainly not enough if you cut it thick like I do. Might have to put a piece of tin foil lightly over the top towards the end if additional baking is necessary to keep the top from browning too much. This recipe is hard to ruin so don't depair.

Sugar Cookie Icing

This needed one more tsp of milk to make the powdered sugar smooth. After I added that, it turned out well. A good recipe. Not the perfect one I was looking for, b/c it didn't harded up as quickly as I needed. Trying some royal icing and hope I can find one that isn't cement!
