Santa Fe Enchilada Bake
You can leave out the tortillas for a low carb dish. I've made this with both shredded chicken and shredded flank steak that I shredded in my food processor (a few short pulses is all you need). Turns out great! Thanks for the recipe and idea!

Pressure Cooker Italian Chicken Soup
Excellent! No modifications as mentioned by others. It's great just the way it is. The pressure cooker makes quick work of the chicken!

Pressure Cooker Chili
This Chili has a great texture. I was skeptical of a chili that didn't include any corn starch to thicken the sauce. But this really turned out well. The pressure cooker makes this a quick, easy, and energy efficient recipe.
