Breaded, Fried, Softly Spiced Tofu

I left out the spices and replaced the yeast with cornstarch. Dipped in sweet soy sauce... for those who don't know, this is the fried tofu you can get in japanese restaurants!

Chunky Tomato Potato Soup

Used pureed fresh tomatoes instead of canned ones. I didn't use the full amount of potatoes or onion, and used equal amounts of milk and broth. However, I found this soup to be way too thick. I think maybe increasing the total amount to 3 cups milk and 3 cups broth would work better. Seriously, it was so thick, you would have thought it was baby food!

Chicken Noodle Soup

I doubled the carrot and onion, added potatoes (why not), and used fresh ground peppercorns instead of ground black pepper. Much better flavor! Since I didn't have marjoram or parsley on hand, I used basil and oregano instead. Also replaced the egg noodles with some mixed wild rice. I ended up with a lovely chicken rice soup! Mmmm.

Chocolate Peanut Butter Cups

Great recipe, tastes good, the only problem is that IT STICKS TO THE PAN. YES, I oiled the pan well. But they're still stuck fast. I don't know how it worked for other people, it's really misleading when some people say use the cups and others say just oil the pan. But next time, I'm using oiled paper cups... HOPEFULLY it'd work out.

Simple Whole Wheat Bread

I used white bread flour and whole wheat bread flour. Good texture, and rose very well. Too bad I overbaked it by 2mins... must watch more closely next time!

Lite Carrot Cake

HOW TO MAKE THIS INTO A GOOD CAKE: Add 1/2 tsp vanilla, 1/2 tsp salt, and some walnuts and raisins. Make sure that you use as many cups of grated carrots as flour. No kidding, this is what the cake is lacking. Add these in and you'll have no problems with blandness. I made these into muffins and got 18.

Soft and fluffy rolls. Stayed that way for 3 days too! I used half white bread flour and half whole wheat bread flour, yields a much better texture than using all purpose.

Best Big, Fat, Chewy Chocolate Chip Cookie

I didn't sift the dry ingredients- doing so would create a cakey texture. I reduced the brown sugar to 3/4 cup and white sugar to 1/3 cup. Also halved choco chips and found there to be plenty in the cookies already. I'd recommend these changes for anyone with milder tastes. Chewy and not cakey. A good cookie. =)

Burger or Hot Dog Buns

Excellent recipe! I just switched around the method used to mix the buns, since I used traditional yeast. I had no problems with denseness- I always proof my dough and shaped buns in a preheated 115F oven and I used approx half bread flour and half all purpose flour. Bread flour is twice as expensive as all purpose, but it is worth it- it gives such a better texture to bread! I urge those who had problems with this recipe previously to try again with my suggested changes.

Crisp Oatmeal Cookies

To get really crisp cookies, just cut the amount of brown sugar in half, and increase the white sugar by 2 tbsp. Then bake for 15 mins~ voila! Crisp cookies that you CAN'T get from using equal amounts of brown and white sugar.

Real Italian Calzones

Wonderful dough that baked up nicely! I doubled the oil in the recipe since I didn't want to risk dry calzones. I filled the calzones with japanese style curry instead. Delicious when fresh~ Gets rather dry and chewy the next day.

Creamy Apple Cinnamon Raisin Oatmeal

Hmmmm I replaced the water with milk, as I knew cooking oats with water would be bland. I added the cinnamon and some vanilla after the oats finished cooking, since I know the heat might destroy the fragrance. An okay recipe, I'll try again, maybe adding a tsp of margarine to the oatmeal next time?

Quick Cherry Turnovers

Great simple recipe! I omitted the icing, and used an egg wash on top. I put both a cream cheese and the cherry pie filling. (pick out the cherries, cut them up, and dont put in too much filling!)
