Pan Seared Scallops with Pepper and Onions in Anchovy Oil
This was excellent. I didn't have anchovy oil so I added some bacon instead. I served it with angel hair pasta which I seasoned with butter and garlic salt. I will definitely make this again!

Flounder Mediterranean
This is a different and delicious way to serve flounder. It was very flavorful. I did substitute cherry tomatoes for the plum tomatoes because that is what I had on hand.

Awesome Carrot Cake with Cream Cheese Frosting
I have been using this recipe for a few yeras now. It comes out great everytime. I made it again last week but I cut the recipe in half (serving 12) and baked it in a glass 8X8 baking dish. It was perfect. Someone even said "it was the best carrot cake they have ever eaten":)
