Chocolate-Candy Cane Cake

Really delicious! Followed instructions for mixing the cake exactly except subbed mini choc chips for the chopped baking squares. I also baked it in a bundt pan instead of the 2 cake pans and served with a dollop of cool whip and a sprinkle of crushed candy canes. We loved the crushed candy canes in the cake and I don't think it changed the texture of the cake at all. Very moist and rich, and definitely company worthy. Will definitely make again.

Argentine Chimichurri Bread

My family loves this bread! I make fresh bread almost daily, but this is the first time I made a new recipe twice in one day. The first loaf was intended for my son to take to his Spanish class, but my family ate it with dinner because they couldn't resist, so I made another one for him to take. Made in the bread machine on dough cycle, shaped the loaf and baked in my oven at 350 for 30 min. Followed the recipe as written, except subbed red wine vinegar for the white, wheat germ for the wheat bran, and used all-purpose flour as that was what I had on hand. The dough is sticky, but is easily worked with a small amount of flour. The finished loaf is light and full of flavor. It also fills the kitchen and the house the best aroma as it mixes and bakes. Mmmmm!!!!

Cinnamon Raisin Swirl Bread

So very, very good! Subbed powdered milk for regular and subbed craisins for raisins as it was all I had. Plumped them up in some warm water for about 20 minutes prior to putting ingredients into the pan and then used the drained water from the craisins to make the bread. Before I added the craisins to the dough, I placed them on a paper towel to absorb the extra moisture and then tossed with a T. of flour. It helped reduce the stickiness and improve the overall texture. I've also tried adding 1/4 c. finely chopped apple, 1/8 c. walnuts and subbed some white flour for wheat and loved it that way too. And like many others I added 1 tsp of cinnamon to the dough and doubled the filling. Great recipe and great ideas from reviewers to change it up if you want. Highly recommend!

Truck-Stop Buttermilk Pancakes

Love these pancakes!!! It definitely makes enough for a truck stop. I only have two men (DH and son) to cook for so I scaled the recipe to 8 servings and ended up with 8 cups of batter. To use the leftovers, I spread them with butter, sprinkled with cinnamon sugar and rolled up for snacks. Very good warm or cold. Prefer buttermilk to the milk/lemon juice substitution. Best pancakes we ever had!

Farmhouse Barbecue Muffins

Easy and very good. Daughter won't touch anything with ketchup, so I used a 1/2 cup of tomato soup, 1 T. BBQ sauce, 1 t. prepared mustard and a 1/4 t. of pepper.

Ranch Hamburger Buns

This recipe is pretty forgiving because I didn't have the right ingredients on hand to follow what was written, and they turned out great anyways. Didn't add the ranch or cheese. Only had 1 T of the powdered milk, but added 1 T of buttermilk to replace. Subbed sour cream for the plain yogurt. Used 2 c white flour and 1 c wheat and otherwise followed the recipe. I served them with sloppy joes and they held up very well. Great texture and flavor!

Spicy Chicken Spaghetti

Delicious, hearty and definitely a keeper. I did make a few changes - sauteed and onion and a big clove of garlic instead of using onion and garlic powders. Also subbed leftover roasted chicken breast for the chicken tenders - green chilies and some crushed red pepper flakes for the jalepenos (daughter is allergic) and omitted the olives. We really liked the corn. Lovcd finding a recipe that I can just throw together on a busy night. Thanks!

Orange Pork

We loved this! Like many other reviewers, I followed the suggestions of LIZ5 for the stir-fry and used low-sodium soy sauce. I used homemade chicken broth which cut both the saltiness of the soy and mellowed the impact of the orange juice, but it worked for us. (I added 2 1/3 c broth and ended up adding 1 T cornstarch mixed with 2 T water to thicken. The flour wasn't enough on it's own to thicken that much liquid) Did add 2 cloves fresh minced garlic, but had to use ground ginger (1/4 t), because I didn't have any fresh. Used shredded carrot, celery, water chestnuts and broccoli this time, but I am sure other veggie combos would work just as well. Definitely give this one a try!

French Breakfast Muffins

Different, but SO good!!! I doubled the recipe and used 1/3 c butter and a 1/3 c unsweetened applesauce just to lower the fat/calorie count, which worked very well. Also used leftover butter from the cube to melt and apply for the topping - using a pastry brush. Didn't even use it all, but the cinnamon sugar mixture stayed on just fine. These were done in 20 minutes and made 15 large muffins. Will definitely make again and again. Thanks Kelly!

Peach Preserves

This recipe is delicious! The peaches I used were very juicy, maybe even on the overripe side and cooking the peaches down for 20 minutes was essential for eliminating the extra water. However when I went back to measure the liquid amount I only had 4 cups, so I reduced the amount of sugar to 3/12 cups and used the 1.75 oz package of pectin. It set very well, not as thick as jam, but it wasn't runny either. The flavor was very good, and I love the color. The only other change I made was to add a cinnamon stick and a pinch of nutmeg for just a hint of spice. This is a sweet preserve, but the sugar does help it set. Will definitly make again, probably today or tomorrow because the batch I just made is already almost gone!

Mexican Rice II

Super good and easy! I did change it some so I could use some of the tomatoes/produce from my garden and I loved it even more. Changes I made were 1.) Rinse the rice in a colander for several minutes under cold water - to remove some of the gluten - then drain. 2.) Take about 3/4 c fresh tomato, cut into quarters, and about a 1/4 of a medium onion, sliced lengthwise - place on a cookie sheet, drizzle with olive oil and sprinkle with black pepper and place in a 450 oven until soft and roasted. Set aside to cool, then chop. 3.) Saute the rice in olive oil and added a big clove of minced garlic and the cumin near the end of the browning process. 4.) Then added the chicken broth with 1 T. green chilies and 1 T. tomato paste. 5.) Add tomato/onion mixture to the rice near the end of the cooktime. 6.) and add a little cilantro and a squirt of lime when finished. So good and I can taste all the freshness from my garden too. Love it!

Blueberry Snack Bars

Definitely give this one a try! It is wonderful!! The 1st time I made this, I followed the recipe as written and loved it, but I like to play with recipes so the 2nd time I reduced the butter and added applesauce which worked, but made the dough stickier and a little harder to work with when spreading it in the pan. Next time I make this I think I will try a lemon cake mix because that sounds good too.

Broccoli and Rice Stir Fry

This recipe was a godsend! I was looking last minute for a quick and easy side for a citrus/soy marinated grilled pork chops and I found this. Didn't have any fresh vegetables, so against everyone's advice I subbed a frozen broccali, cauliflower and carrot mix. It worked, but only because I thawed it in the fry pan and moved it around only until it didn't look frozen anymore. Added the green onions and put mix in covered bowl while I scrambled the eggs. Added back in with the rice (only had a 1 1/2 c precooked on hand) and soy - used 1 TBS (because I didn't have much rice), 1 clove minced garlic and sprinkled in about a 1/2 t of ginger. SO GOOD! Family loved it more than the pork chops... Will definitely make again because it was so easy, but I would love to be a little more prepared and try it again with fresh veggies.

Rhubarb Berry Jam

My daughter and I made several different jams last Saturday and this is our favorite so far. This is so easy, the only thing to watch is to make sure the gelatin is fully dissolved before pouring into your containers for storing.

Salsa Bread

This is really good! It kind of reminds us of mexican monkey bread. Very easy, and the kids just gobbled it up. I didn't have salsa, so I used a can of Rotel (liquid drained) and a can of green chilies instead. The aroma while it was baking was wonderful and I can't help thinking this would be an interesting alternative to cornbread. Will definitely make again. Update: made again, but used muffin tins instead of the large baking dish and it was even better! It gave the bread more of a cheese crust. Anyways I continue to use the Rotel/green chilies instead of the salsa. I like the flavor better.

Chicken with Chipotle

Wow! Fast, easy and tastes fantastic... This doesn't need modifications unless you want to alter the number of peppers to raise/lower the heat. Only used 1 chipotle pepper and several tablespoons of adobo sauce because husband prefers blander food and it was perfect for him. Served over rice.
