Sweet and Sour Meatballs III
I made this for co-workers (we have a group that alternately provides a crockpot lunch on Mondays). I made my meatballs (turkey) from scratch, using a dense multi-seeded bread for breadcrumbs,egg and a handful of 'craisins'- then microwaved them in batches. The only changes I made to the recipe was to substitute Splenda Brown Sugar for the reg.brn sugar as we are all doing the 'biggest loser challenge' at work. The jar sauce I used had carmelized onions and roasted garlic in it. The comments from the 'crew' were 'Awesome!', 'to die for...', 'f--- wonderful'(from a woman who we rarely hear swear), and 'oh my God! this is great!!!'. One person came by my desk and said, "definitely 5 forks!" ... enough said? My husband even had enough left for our dinner that night. He loved it, too... need I say more?

A Nice Slow-Cooked Pork
I decided to rub the salt, pepper & rosemary into the roast and brown it in olive oil, before adding to crockpot. I never measure 'chopped' potatoes, just cut up 4 med and 2 sweet potatoes. Didn't have pearl onions so chunked 3 med onions, and after reading how much liquid everyone's having left in it, I used a TOTAL of 3 cups between beef broth,rose wine & sherry (only had 3/4 cups sherry-rest was beef broth-1 can and wine to bring up to 3 cups). Also added 3" chunk off stalk of celery, cut to 1 1/2" sections and a few carrots,chunked up. Roast tasted good, but it 'shredded' when I tried to cut it. Would make GREAT shredded pork, but I may have to use a different cut of pork or let it sit a while before cutting-I think I used a boneless pork loin.

Easy Morning Glory Muffins
Absolutely delicious!! My husband and I had these for the 1st time in a little local breakfast place on our honeymoon in Maine (we brought back 2 dozen). I've recently seen them at our coffee hour at church and the woman making them said she added pineapple to them (little too sweet). I adjusted the 1 c. oil for 1/2 c oil and 1/2 c. applesauce and after measuring the sugar called for, I shook some of it out of the cup (maybe used almost 1/4 c. less). Will make again and I'm sharing this with a friend.
