15-Minute Dinner Nachos Supreme

Yummy! We loved this! it is such a yummy, easy dinner. I'll definitely be making it again. The only changes I made were to have sour cream available and when the rice/meat mixture was done, I topped with the salsa, cheese, and sliced olives. I then covered it all and heated on low until the cheese was melted. Oh, and I also added a drained can of diced tomatoes, but I don't think they were necessary, yummy, though!

Turkey-Cheese Macaroni Bake

Yum! We loved this recipe! I did make some changes, though. First of all, I took other’s suggestions and added veggies. I had a bag of mixed corn, carrots, peas, and green beans, I threw in a few handfuls of that. Next, to the white sauce, I added about ½ cup of sour cream, a few dashes of garlic powder and a few dashes of parmesan cheese. For the topping, I didn’t have any parsley, so I used Italian seasoning, oregano, and basil. Lastly, I didn’t have enough cheddar, so I used mozzarella and a Mexican cheese mix to make up the difference. Sorry I made so many changes, but the result was amazing!!

Cashew Crusted Chicken

Excellent!! My husband and I loved it! It will definitely go into my rotation. I did serve the sauce on the side and broiled the chicken for 3 minutes. Thanks for the recipe!

Very good, but we didn't like the eggplant. I know vegetarian is the idea here, but with some chicken slices, we would have liked this much better.

Basic Chicken Salad

Exactly what I needed when our air went out all of a sudden and I dreaded turning on the oven. I obviously had to use what was on hand, so I subbed in cashews instead of almonds and relish instead of celery. I also added a dash of garlic powder. Wonderful!

Chocolate Banana Peanut Butter Shake

I'm sorry, but we didn't really like this. It was waay too peanut-buttery. I don't think we'll be making this again, but if you try it, start with a small amount of peanut butter and work your way up.

Homemade Banana Pudding Pie

Yumm! Excellent! I made this for Easter and it was long gone by the time we came home. I didn't change a thing, but I wanted to make 2 9x13 dishes for both sides of the family, so I figured, 1 batch serves 8, tripling the recipe should be good - wrong!! I tripled it and it made 1 9x13" dish - Just a word of warning. Also, for that size dish, I used 4 bananas (and don't triple the wafers either).

Quick and Super Easy Chicken and Dumplings

I'm not a huge fan of chicken and dumplings, but my husband is, so I made this for him. I made it exactly like the directions and it turned out well. It's not something I would get excited about eating, but it was good and he liked it. Definitely a plus that you can make it so quickly!

Cow Pies

These are great and very simple. My husband was wary of them, but I was curious, so I went ahead and tried it. He loves them! I had to use honey roasted peanuts since that is all I had, and they actually worked. I did not chop the peanuts, and some parts of the treat are hard to bite into, so if you have the time or are making them for a party, I would go ahead and break them down just a little for ease. But for us, it was fine.

Slow Cooker Chicken Taco Soup

I love this recipe. I have made it twice in the last month and am going to make it again tomorrow. It is so easy to make for a big group. I just start it in the morning and it's ready when we are. It's a great one-dish, no hassle meal. I've had nothing but raving reviews. I make it exactly as stated with the exception of leaving out onions, using regular taco seasoning, and using chicken broth instead of beer. Mmm. Thanks for the recipe!

Classic Macaroni Salad

This salad is exactly what I was looking for. I needed it for a cookout and it was perfect. The only change that I made was to use apple cider vinegar since that is all I had. I used a sweet onion and a couple of shredded baby carrots. Since everyone had said that the salad really needed to sit overnight but also that it dried out some overnight, I made the dressing the night before and just added the pasta a few hours before the dinner. That said, that was a few days ago, and I still don't think that the salad is dry. We're still enjoying it. (It does make a lot!!)

Pumpkin Cookies I

Yum! I am very surprised to say that my husband and I loved these. He usually eats chocolate desserts and little else, but he loved how moist these were. We took them to a party and everyone liked them. I made very minor changes. First I used margarine since that's all I had and used only 1 cup butterscotch chips and 1/2 chocolate chips (had to get them in somehow). Also, I scaled the recipe so that I could use the whole can of pumpkin (mine was 1 1/2 cups). Also, I had to bake the cookies for 14 minutes. Super moist and yummy!

Chocolate Eclair Cake

This is a favorite in our house. (If I take it anywhere else, I have to promise to make another batch for my husband!). My mother in law has asked that I bring it to every family function. And I definitely recommend that you make it a day ahead, there is no comparison. Other than that, I haven't changed anything. Also, I do use the sauce and haven't had any problems. It was grainy a couple of times, but I think that I just didn't boil it quite enough. DELICIOUS!!

Molten Chocolate Cakes With Sugar-Coated Raspberries

Perfect!! I have been wanting to make a chocolate lava cake for the longest time, but all of the recipes sounded so complicated. I found this one yesterday and had to try it last night. They were amazing and so easy! My husband would have no problem eating them every night! I didn't change anything, except to make them in little ceramic cups. Take them out as soon as the edges puff up and the middle doesn't and-Perfection! I am going to serve them with vanilla ice cream next, mmmm!

Overnight Apple Cinnamon French Toast

I absolutely loved this french toast. I've never attempted any french toast before, but I don't know that I'll try another! I made it exactly as stated with the exception of halving everything for an 8x8 pan and using the cinnamon swirled bread that someone recommended. I also took everyone's recommendations to bake it the full 75 minutes. My husband and I loved it! I wouldn't change anything. I'll definitely be making this again!

Raspberry-Glazed Rosemary Chicken

I thought that it was great. I did add more honey mustard than was called for, but the flavors worked really well and the chicken was really tasty. Do make extra of the raspberry sauce, it's great for dipping!

Chicken Stir-Fry

I made this for the first time the other night for my boyfriend. It was great! I have not had a lot of experience cooking and it turned out perfect. I did leave out the onions and celery and added a small can of water chestnuts. I am thinking about adding baby corn and mushrooms next time I make it. You can have fun and do anything you like to it. Great recipe!
