Basic Ham and Bean Soup
This is a very good recipe. It reminds me of a favorite soup I ate as a kid. I "degassed" the beans as some other reviewers suggested and it worked like a charm. I also added the salt after cooking just to be on the safe side.

Olive Salad for Muffalettas
Very authentic NOLA flavor! Just a little too much of an onion aftertaste for me when eating it straight. Hopefully when I put it on the Muffaletta sammich with the ham, salami and provolone it won't be as noticeable. I think next time I'll use 1/2 a small red onion or just rinse the onion with water before mixing it in to take the edge off.

Easy Quiche
I thought there was too much cheese in this recipe. I told my husband this and he responded, "Is there such a thing as too much cheese?" Well, personal preference I guess, but I like it to be more eggy. I also added a little onion powder, garlic powder and salt for extra flavor.
