Chicken and Peppers with Balsamic Vinegar
Things I changed because I wanted to spice it up a bit: I used 4 peppers (red, yellow, orange and green), extra couple cloves garlic, a little extra onion, a small handful of FRESH basil and about a tablespoon of FRESH oregano along with ground black pepper and red pepper flakes. I also made this VEGETARIAN by using Morningstar farms chicken strips cut up in 1 inch cubes. I used a high quality balsamic also. I served over linguini pasta. This was absolutely wonderful! I will make again for sure!

Artichoke Spinach Lasagna
This turned out just wonderful. Would highly recommend! Added a little more garlic than it called for along with fresh basil, oregano and red pepper flakes to zip it up a little more. My husband just loved it and so did I! Will absolutely make again - soon!

Slow Cooker Lasagna
My daughter made this into a VEGETARIAN version. Turned out wonderful! In a skillet she sautéed, in olive oil, 1 medium chopped onion and 3 minced cloves garlic- cooked until soft - then added a box of 'Boca Crumbles' (or use one bag Morningstar Farms crumbles), cooked just until heated through. She also added fresh basil and extra 1/2 jar pasta sauce so it wouldn’t get too dry. It was awesome!
