Cheese and Sausage Stuffed Zucchini
This was delicious and received rave reviews from my husband and kids! I added green pepper and garlic and cooked the pepper, garlic and onion with the sausage. I used 1 tbs of Italian seasoning and added some fresh herbs from the garden. Next time, I might add a 1/4 to 1/2 cup bread crumbs to firm up the stuffing a bit. Definitely Recipe Box worthy.

Teriyaki Tuna Steaks
I used this recipe as a guideline and made on of the best meals I've made in a long time! I marinated the tuna steaks for several hours in some orange juice, soy sauce, liquid smoke, seasame oil, cracked pepper, garlic and fresh ginger. Then I broiled the steaks in the oven on a cedar plank to about medium. I served the fish with pineapple and julienned carrots cooked with garlic, ginger, tamari, and sesame seeds. Definitely entertaining worthy.

Turkey Wild Rice Soup
YUM! I made this for a crowd, so I made some changes. I used a whole white onion, several carrots, some corn, and celery. I used a cup of wild rice, a quart plus a can of chicken stock, and 3 cups of water. I had a 1 lb of ground turkey and 1 lb pork/bacon sausage. This was the meat I used. I added chicken stock granuales to taste. The end result was a real crowd pleaser. I finally know how to make a decent creamy soup perfect for those cold ND winter nights!
