Mexican Tinga
This was so easy and so good. I used mexican style stewed tomatoes and only 1/4 of the can of peppers. I also topped this with mexican sour cream and queso fresco.

Shrimp Scampi Bake
I don't know what happened, but I thought this tasted like nothing. I even doubled the garlic and lemon and added crushed red pepper and dried basil and it still had no flavor. I cut down on the butter and there was still a pool at the bottom of my bowl when I was done. I'll stick with my other shrimp recipes!

Seven Layer Bars
These are very quick to make and are really good. Next time I think I will try with peanut butter chips instead of butterscotch. Mine took about 10 minutes less than stated to cook.
