Slow Cooker Italian Beef for Sandwiches
My family enjoyed the sandwiches. It's not exactly like a Chicago-style Italian beef, but it's still delicious. I used 3 cups of beef stock (no salt added) and about 1/2 a cup of zinfandel for the liquid instead of water. I also used 2 packages of italian dressing, as others suggested. I used a chuck roast and it turned out great. My roast was just over 4 pounds and it cooked fairly quickly. It was done within 7 hours. I shredded it at 7 hours and turned the crockpot down to low/warm for another hour and a half or so. I'll make this again.

Butterscotch Banana Drops
These were pretty good. A good use of overripe bananas. I added a tsp of vanilla--I think it could have used some cinnamon. My husband liked these a lot. We'll see what the co-workers think tomorrow

Pineapple Banana Bread
I used this recipe to make muffins. They were great--I got lots of compliments on them at work. I would not make these without nuts. I would cut back a bit on the sugar next time--it was just too much sugar. I used 2 overripe bananas and one green banana, as well as fresh pineapple. The recipe made 30 muffins--and it took 32 min to bake the muffins. I will make this recipe again.
