Pumpkin Black Bean Soup
I followed others' suggestions and doubled the pumpkin, but only used 2 cans of beans (1 pureed, 1 whole). Also used cider vinegar. Next time will use less vinegar or try red wine instead.

Grilled Steak Pinwheels
Turned out just as I was hoping it would! A bit put-zy to assemble, but a wonderful success, both in flavor and presentation, for a special dinner with friends. We secured each with a toothpick soaked in water and grilled them on foil in case they fell apart, but they held together well.

Spinach Caprese Salad
Loved this one. Attractive presentation. Easy to plate individually ahead of serving time and keep chilled in frig. I increased the balsamic vinegar to my taste.
